    If you’re craving savory, salty and meaty flavors in your raw vegan diet, give this raw vegan paella with cauliflower rice a try.
    Raw Vegan Cauliflower Rice Paella:
    10 oz. raw cauliflower, chopped and riced
    1 red bell pepper, seeded, cored and chopped
    A few dashes of garlic powder
    ¼ cup fresh chunky salsa, drain off any liquid
    A few dashes of sweet paprika powder
    A few dashes of smoked paprika
    1-2 tablespoons nutritional yeast
    A few twists of freshly ground black pepper
    Bunch chopped parsley or cilantro leaves
    1 orange (1/2 juiced, other half sliced into bite sized chunks)
    Handful sugar snap peas, cut into 1-inch pieces
    1 carrot, medium, shredded
    Stalk fennel, small, sliced
    Toppings:
    1 teaspoon nutritional yeast
    ¼ cup sliced large green olives stuffed with garlic & jalapenos (about 4)
    Half an orange, sliced into bite-sized pieces
    Marinated mushrooms:
    4-8 ounces mushrooms, sliced
    3 tablespoons coconut aminos
    1 tablespoon oregano, dried
    In a medium-sized bowl, add coconut aminos, oregano and stir to combine. Wash mushrooms, remove stems, and thinly slice. Gently place mushrooms in bowl with marinade and gently press and toss raw mushrooms into the sauce to cover and soak. Place sliced marinated mushrooms in a dehydrator, separating each mushroom, until dry but still flexible (from 4-12 hours) at 115 degrees.
    When mushrooms have completed dehydrating to the consistency you like, rice fresh cauliflower in a food processor to make small even pieces and put in a large bowl. Toss riced cauliflower with paella ingredients. Top with nutritional yeast, sliced green olives, orange pieces and marinated mushrooms. Eat right away.
