  • Chidambaram Brinjal Gothsu is a popular side dish/accompaniment for Ven Pongal / Idli / Dosa. It's a tamarind based gravy made using perfectly cooked brinjal and freshly made masala powder. It's one of the signature dish in Chidambaram where it's served along with Ven Pongal.

    NGREDIENTS
    1 Gooseberry size Tamarind (or 1 tbsp Tamarind Paste)
    5 nos Brinjal cubed
    2 pinch Turmeric Powder
    1 tsp Salt adjust to your taste
    2 tbsp Cooking Oil
    FOR GRINDING
    1 tsp Oil
    2 tsp Coriander Seeds
    1 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
    1 tsp Urad Dal
    4 Red Chili adjust to your spice level
    ¼ tsp Fenugreek seeds
    FOR TEMPERING
    2 tsp Oil
    1 tsp Mustard Seeds
    1 pinch Asafoetida (Asafetida / Hing)
    few Curry Leaves
    2 Green Chili

    Just the way we make at home..superb..We can also substitute tamarind with tomato paste..it tastes equally good..Thanks for reviving old recipes made the authentic way..What I like about your recipes is that you don't use garlic for each and everything... great.

    Perfect mam , one small correction ( Pls dont mistake ) . Brinjal should not be cooked in steam by closing the lid. It should be cooked only in sesame oil ( naal yennai) . Your quantity of oil is very less . 1 KG brinjal easily it would consume 200 to 250 ml of sesame oil . Taste of this would be out of the world . Rest all what you said is perfect mam. Chidambaram kosthu is made only out this ratio Oil Vs Kg of brinjal.

    Thanks a lot a lovely recipe
    my grand father likes it a lot we make it by burning big brinjal but the masala is not crushed and added along with the oil . Red chilli is skipped and green chilli is only used .
    One additional tip , cut one inch ginger in to small pieces and crush it with green chilli in a pestle and add it after mustard seeds crackle .
    Another variation is add 1 tomato and put cut brinjal cubes that also tastes superb

      @@Subbuskitchenpage delux brinjal that is mostly sold in shops will not have that much taste and will become watery when cooked,, go for other gundu varieties.
