  • Chakhokhbili is a traditional dish of Georgian cuisine - ragout with poultry stewed with vegetables. There are special ways of cooking chakhokhbili in different parts of Georgia. Somewhere a dry wine is added to chakhokhbili, somewhere cherry-plum or plum. But all the variants are united in one common - amazing taste and superb flavor.     ✅ Ingredients:
    • chicken - 2,2 lb / 1 kg
    • garlic - 1 oz / 25 g
    • bulb onion - 1,3 lb / 600 g
    • tomato - 2,2 lb / 1 kg
    • vegetable oil - 3 tbsp
    • salt - 1 tbsp
    • ground black pepper - ½ tsp
    • utscho suneli - 1 tsp
    • khmeli suneli - 1 tbsp
    • chili flakes - 1 tsp
    • coriander - 1 tbsp
    • parsley - 1 oz / 30 g
    • cilantro - 1 oz / 30 g
    • basil - 0,5 oz / 15 g
    • 1 red chili pepper
    ✔︎ You will need:
    • pan or saucepan
    • bowl
    • carving board
    📙 Preparation:
    1. Pour boiling water over tomatoes and leave for 5 minutes, then peel off and chop.
    2. Cut the onion in half rings 0,1-0,2 in / 3-4 mm thick.
    3. Shred the garlic.
    4. Chop up the parsley, cilantro and basil.
    5. Divide the chili pepper in half, remove the seeds and web and cut into half rings.
    6. Cut the chicken into portions.
    7. Heat the pan and fry the chicken dry over high heat until golden brown for about 1-2 minutes each side.
    8. Add the onion and fry over medium heat until golden brown, occasionally stirring, for about 3-4 minutes.
    9. Lay out the fried chicken and onion into the saucepan, add the stirred tomato, stir again, bring to a boil and cover with the lid, reduce the heat to low and stew for 20 minutes.
    10. Season with the salt, ground black pepper, utscho suneli, khmeli suneli, coriander, garlic, stir and stew for another 7 minutes.
    11. Add the parsley, cilantro, basil, red chili pepper and switch off the stove. The chakhokhbili is ready.

    It is called - Chakhokhbili, not Chahobili. Chakhokhbili comes from Khokhobi, which in turn means a pheasant.
