Hi Matt, I just bought a huge 10lb bag of carrots (from Costco, of course) and made this delicious carrot 🥕 soup (stovetop). Nutmeg is perfect on this 👌
I would remove the peel and seeds from the squash and roast it first until soft then add it with the other ingredients, and I would still a few carrots with it, maybe an apple as well.
From the many 30 soups I have tried living in America and going to nice retuarants and what not, it's too liquid. Perhaps it's our preferences clashing but the general soup recipes that are puree like have less water added.
@@june5646 It's not too liquid, haha. Soups can be however you want them to be. Some are thick and some are thin, this is made exactly how it is supposed to be, it is not a stew it is not chili. I have been making and eating soups for over 30 years haha, I know what a soup is and what a soup isn't. But with that said, there are many many many varieties of soup. And you haven't even tried this haha. Oh and by the way this recipe came straight from the chefs at Vitamix with a few changes. Specifically made to be done entirely in the Vitamix, heating and all.
@@inthekitchenwithmatt sure i havent tried it and i could be wrong. Perhaps its the heat that makes it look to runny to me. Maybe it does have a good texture and i mis judged you.

I love curried carrot soup. You can try 1-3 teaspoons of curry powder. Delicious! To make the soup creamy, you can add milk or cream to taste.

You shouldn't have added the stock, it is too much water, you made a shake from it, not even a smoothie.
