Just my opinion after eating plenty of what I gathered to be 3 major oysters hubs, that being in pacific nw, eastcoast New England, and of course Louisiana bays.. all are great in certain varieties, but overall, Louisiana southern types are the best for the money, especially these days when restaurants all around are charging 3-4 bucks per oyster! (When in fancier steakhouses)

I'm no expert, but I seem to prefer the taste of East Coast oysters: more of a fresh, brisk, bracing, 'cleansing' taste -- in a delicious way. Icy goodness.

@Lost on Long Island: Thanks. Yeah, I believe I've had oysters from the three coasts as well. Good to know I'm not crazy in my preference. Cheers!

I know you can eat them raw but lets say you want to steam them...how long would it take? Also thinking about getting some from a seafood store nearby buy not to sure what to type to buy. Unshucked or shucked oysters? They apparently come in a dozen but I've heard that they go off quicker if they're unshucked? Any advice to both my questions?

I'm pretty sure a few years ago I ordered oysters from my local seafood market and they said they came from most likely Washington but could have come from Oregon and they tasted great and I did notice the oyster itself was grey in color . A few years ago we would also get them coming in from Apalachicola before they stopped harvesting that particular area but don't remember what color they were . Nowadays they are coming in from New Awlins and seems the last time were a mixture of the greys and white/cream colored although the creamed ones have thicker robust shells unlike that of the ones I pry off of boat ramps in Pensacola Bay which have paper-thin shells , are razor sharp , and tend to have pieces of shell stuck to oyster after shucking but usually taste just like any other oyster to me . I believe that the taste of oysters depends on where it's at in digesting its food ; if they haven't been purged of stomach contents they can taste like spinach , taste like creamed peas , or be bitter ( I think those bitter ones are the ones with black around the edges , although eating those probably won't kill you , and I believe the black areas are the end trails or poop shoot ) . Although you probably will only notice the subtle difference in taste when eating them plain , raw , and straight from the shell .

Gulf oysters are good for making oyster stew or oyster stuffing. They aren't as good eaten raw.

Dude obviously never had new Orleans oysters. Our oysters are plump and sweet and can be cooked many ways or eaten raw. Keep your hipster oysters elsewhere!
