豆腐乳Fermented Bean Curd

生抽Soy Sauce
五香粉Five-Spice Powder
黑酱油Soy Caramel

配料Part A
煮一锅水,倒入栗子,将之煮至熟透
Add dry chestnuts into a pot of boiling water, cook until softened.
配料Part B
将糯米预先浸泡两小时
Soak glutinous rice for two hours before cooking
将浸泡好的糯米倒入锅中
Heat up a wok, add soaked glutinous rice and chickpeas.
加入适量胡椒粉、生抽、黑酱油、五香粉和盐
Add right amount of pepper, soy sauce, soy-caramel, five-spice powder, and salt
稍微翻炒,过后加入鹰嘴豆(并再次适度的调味),再翻炒10分种
Mix well, then add chickpeas (adjust seasoning accordingly). Then stir for 10 minutes.
配料Part C
另起一镬,将食用油倒入镬中,加入姜,炒香
Heat up a separate wok, add cooking oil and stir-fry ginger until fragrant.
加入香菇翻炒
Add shiitake and continue frying
加入适量黑酱油,生抽,翻炒至颜色均匀
Add dark and light soy-sauce, mix well.
加入水,水的分量覆盖香菇即可
Add water (until all ingredients are covered)
焖煮30分钟
Simmer for 30 minutes
配料Part D
再另起一镬,加入宽油,油炸素料直到呈金黄色,捞起备用
Heat up another wok, add cooking oil and deep-fry Vegan Mutton (or preferred ingredient) until golden
再另起一镬,加入食用油及豆腐乳稍微翻炒
In another wok, add a bit of cooking oil, and stir-fry fermented bean curd until fragrant
把炸好的素料倒入翻炒
Add vegan mutton and ingredients deep-fried earlier, mix well.
加入黑酱油
Add dark soy-sauce
加入生抽
Add light soy-sauce
加入胡椒粉
Add pepper
翻炒至均匀
Mix well
加入焖好的香菇一起翻炒
Add in the shiitake cooked earlier (part C)
炒匀后捞起备用
Mix well, and pickup for wrapping
开始包粽子 Wrapping the dumpling
将粽叶做成圆筒形
Shape bamboo (dumpling) leaves into a cone shape
将配料按喜好装入粽叶中
Fill the dumpling with rice (Part B) and other pre-cooked ingredient (Part D) according to your liking
将上半部的粽叶折向下,确保杯状的地方被覆盖并着实包紧后,绑上草绳
Fold the leave (upper part of cone) down, along the cone shape. After the cone is covered and packed firmly, tighten using the leaf rope.
煮粽子 Cooking the dumpling
将一锅水煮沸,放入已包好的粽子,
Add the dumpling into a pot of boiling water
盖上锅盖,煮2小时30分钟
Cover the pot and cook for 2.5 hours.
