The second time I used more foil and I left them on for 45 minutes at hood temp of 340 degrees. and then putting on the bbq sauce every 5 minutes after that for 20 minutes. They were the best ribs Ive ever had! This was my first ever BBQing ribs. Thank you much!
I've used this method a lot when I'm short on time and it works well. Don't flip the ribs over when they are wrapped in foil. Cook it with the crown side up. If you flip them over when they are still wrapped in foil, the rendered fat and grease will basically fry the meat on the top of the ribs and burn them. Accidentally learned this the hard way.
I have used this method twice in the last few weeks on my Weber Spirit and the ribs came out perfect. On the spirit, all 3 burners on low keeps it right at 400 degrees. You would think the ribs would dry out at that temp, but they don't. Make sure to use 2 layers of heavy duty foil.
I'm so glad I discovered the foil method. The way I do it no other method comes out as juicy and tender. Here's my variation. After my dry rub I marinate in some Lee and Perrins mixed with a bit of Japanese hoisin sauce and a bit of my BBQ sauce. I always use Stub's sticky sweet. Make the packet with two layers. I fold it up and add a healthy dose of a good flavorful red wine and some liquid smoke. I actually do cook over indirect heat at around 400-425. It usually takes about 60-75 minutes before the meat pulls back from the bones. Then they come out, get sauced to hell and back with the Stub's, and go over the flames 2-3 minutes on each side, sauce again and repeat until they get caramelized and develop a nice char. Hope this helps someone make a great BBQ. Works great with loin and tenderloin too.
I'm a fan... Tried this method, and everyone walking by our home would comment how good the Baby Back Ribs Smelled. I grill them on a 6 burner propane grill, The Royal Gourmet, at between 275 and 350 degrees, for about 1 hour and ten minutes, removed and added bar-B-que sauce and seared for 5 minutes more, and they came out delicious, finger licking good, meat just about fell right off the bone. i did this method on a charbroil electric grill. 1 hour in foil with chili powder, cumin, salt, pepper, garlic powder, chili powder, red pepper flakes , dried minced onion and sage...then 10 minutes with a wet sauce uncovered by tin foil and they were delicious at 325 F. tweak this method to particular grill and the results are surprising.
Thanks for including the temperature. I tried grilling mine on charcoal with no foil and the hard thing was I could not control the temperature. Had I used the foil, it would have been perfect at the 325 my grill was at. Good thing I had a back up plan of a second portion that I baked for one hour in the oven and then in foil on the grill. OMG .. I used to first cook in the oven and then finish on the Grill .. baby backs used to dry out real fast .. but with this method .. they are very flavorful and juicy .. all in less than 90 minutes. I have an older Weber Genesis C and for the smoking part, I just put the soaked wood chips in an aluminum foil, pierce the foil on top and then stick it directly on the flavourizer bars underneath the ribs .. perfectly smoked ribs all time .. Adding on sauce at 1 hour mark. They always turn out freaking great. I season with pork rub, onion powder, garlic salt, pepper, salt, and lots of brown sugar. Sweet baby rays for the sauce. It won my wife over so try it out lol

I like the way you cooked the ribs but I think you should have rubbed on avocado oil and then your spices the oil holds in the moisture and they won’t be dry plus I add just a bit of apple 🍎 juice
Still prefer 3-2-1 method because I can pound beers while the ribs cook but I'd do this method if I'm in a rush. But I'm never in a rush when it comes to grilling ribs.

I have watched this video many times. I am confused because when you first wrap them you wrap them bone side up. Then when you unwrap them the meat side is now up. When you start the folds are on the bone side but the folds are on the meat side when unwrapped. Do you cook bone side down? Thanks
I also have an older Genesis and plan on trying this recipe tomorrow with wood chips wrapped foil. Regarding the timing though, it typically takes my grill 15-20 minutes before the chips start smoking (I use big chips, maybe that's my probllem). Do you have the ribs off the grill for that length of time and wait for the chips to smoke or do you drop them on immediately? He's putting ribs on before the chips have even started smoking.
tried both foil and exposed ribs... foil hands down, just juicier. they both fall off the bone and are soft like butter, but the foil ribs are just... they're just yummier! thanks, will do this from now on.
I have the smaller chips and they smoke in about 5 to 7 minutes, but they burn quiet fast. I do wait for the chips to smoke before putting on the ribs.
Sure thing, I get my meat from the source a great farmer who has awesome prices and selection of animals. Still spares are meatier, and flavorful. If someone likes BB more, great!
In the foil, it wont burn. But without the foil, it will. If you have a sugar based rub, after the initial 1 hour, glaze with sauce then back to the grill for only 30 seconds to 1 minute each side, just to harden things up a bit. Any llonger and will burn.
