My favorite childhood snack, PB&J crumble cookies 🧒🏻

    Hey There, this is Shupuh!
    One of my favorite childhood snacks is PB&J Sandwich. Secretly I'm still pretty obsessed with the flavor. So I decided to recreate my childhood snacks in dessert form. It tasted just like PB&J Sando but better!
    👩🏻‍🍳Ingredients (Makes 16 Pieces)
    [Cookies]
    Cake Flour 180g
    Powdered Sugar 45g
    Unsalted Butter 70g
    Peanut Butter 35g
    Egg 22g
    [Crumble]
    Unsalted Butter 40g
    Peanut Butter 18g
    Sugar 35g
    Cake Flour 75g
    Almond Flour 38g
    ⚠️Prep
    - Premeasure all ingredients.
    - Preheat the oven to 355°F.
    - Prepare mold with baking sheet.
    🥣How to make
    1. Pour cake flour and powdered sugar on a flat surface and mix.
    1. Add cold butter cubes and peanut butter to flour and chop.
    2. Chop until the mixture resembles coarse meal
    3. Make a well in the middle and pour egg mixture.
    4. Mix until the dough gathers itself into small pieces.
    5. Once flour is not visible, knead the dough with hands.
    6. Press down and push the dough away with palm of hand. This step makes the dough texture tight and even.
    7. Bring the dough into a lump and flatten into a square.
    8. Wrap the dough tightly in plastic bag and chill for 1 hour.
    9. While the dough is chilling in the fridge, make crumbs. Mix lukewarm butter and peanut butter together.
    10. Add sugar when butter gets creamy.
    11. Sift cake flour and almond powder into butter mixture and work the butter until crumbs are formed. Use your hands if you want the crumbs bigger.
    12. Wrap it tight and keep it refrigerated.
    13. Lightly flour the surface and roll the dough into a thickness of about 1/8-inch.
    14. Cut the dough into the shape of the pan and transfer it to the pan.
    15. Press down to the bottom of the pan and make holes with a fork.
    16. Spread jelly on the dough and top it with crumbs.
    17. Bake at 355°F for 25 minutes.
    18. Let it cool and cut into desired sizes.
    🙋🏻‍♀️How to store
    Keep cookies in airtight container. Consume within a week if stored at room temperature or two weeks if refrigerated.

    다들 어렸을적 즐겨 먹던 간식이 있으신가요?
    저는 아빠가 피넛버터를 좋아하셔서 어렸을때부터 즐겨먹었어요.
    그래서 그런지 이번에 레서피를 작업하면서 이것저것 많은 추억이 떠올랐었어요.

    잭슨이 너무 귀여워요😆 저는 어릴때 L사의 애플쿠키, 딸기쿠기 좋아했었는데 이건 크럼블이 굵직해서 식감이 더 좋고 맛있을 것 같아요ㅋㅋㅋㅋ👍🏻
