I would have had the story set on a planet with a red sun to compensate for their power difference. The story could have been Superman helping an alien race on a far away planet and he's working against the clock as he red sun slowly drains his power and then eventually the predator shows up. I like this idea better than how they de-powered superman here.
Although the predator could discover that superman was sick at the end and decide it was against code. Unless it was one of those that don't follow the code.

Superman is then forced to protect some of the most violent hated scum in the galaxy. The Predators are enjoying their hunt until they find a greater prize (Superman). However, they quickly realize that hunting the creature interfering with their hunt is forbidden since he's an endangered species. So now, they've got to complete their hunt in spite of his interference and without harming him.

Yeah, took away Superman's powers to make the story make sense. Lazy writing. A much better take would have been The Predators hunting on a generally violent and warlike planet in the DCU, like Apokolips or Qward. Superman is there to stop one of their plans, but then the entire planet comes under attack by a race of mysterious invisible creatures hunting and killing them. (The Predators, obviously. Superman is then forced to protect some of the most violent hated scum in the galaxy. The Predators are enjoying their hunt until they find a greater prize (Superman). However, they quickly realize that hunting the creature interfering with their hunt is forbidden since he's an endangered species. So now, they've got to complete their hunt in spite of his interference and without harming him.
