    Dear Chef Akis, I had the luck of tasting this dish in Greece many years ago and I cooked it in my house many times, and now I see you recipe and you cook it just the same as I learnt, so you got me inspired, I went to the fishmonger and bought a nice octopus, italian octopus ahaha... and now it's cooking. Just one thing: WHY call it mac and cheese... it's a traditional greek recipe, be proud of it! Thank you and keep on rockin'!!!

      Frozen octopus is generally fine to use. In fact, it is often a better choice as freezing octopus makes it more tender.

      most liquor stores have ouzo. I'm in Pittsburgh and all the stores have it, its not expensive either.

      the longer you cook the softer it gets. cook until it's not rubbery anymore

    Akis your recipes and tutoring are amazing! As a Greek myself I try to improve my Greek cooking skills since I live very far away from home now. Keep up the good work!!
    Yet I wish to give you a tip: Could you improve a bit the lighting of your new shooting location? It seems darker and not so jolly as the old set (you are super jolly and a pleasure to watch by the way :p). A bit of warmer lighting or colors would make it a bit more lively and lavish :) I love seeing the full color palette of your dishes!

      Take it from a Greek...this is one of THE tastiest octopus recipes in existence. I seldom crave greek recipes on youtube, because I eat them all the time but as soon as I saw this I said " *some inappropriate words*, this is incredible"

    I made this with squid and octopus fried the squid for crunch and kept the octopus how you cooked it was very good nd some finely chopped greek olivas

      this is a traditional greek recipe especially for octopus. Its every kids favourite. Translated it means "Mac 'n Octopus" if it makes sense:P I think Akis added the cheese in the title just to make it more comfortable for you guys. As you understand, octopus can't really be replaced xD

      you will be surprised by the texture and taste once it is cooked. I can tell you it is my favorite seafood by far.

    Ok... I lived in an area where I was surrounded by Greeks, awesome people, culture and food!!! Now since I am grown up, I really wonder why they ever left the beautiful Mediterranean?? It may have been because of political problems, which is usually the case! But I realize and am so grateful for your wonderful recipes, Akis!! Besos y abrazos amor!!

    Looks amazing Akis! I will try it soon. I have a question though, if I remember correctly, my mom used to take off the skin of the octopus, so i'm wondering, isn't it better to take it off? And how to take it off? Thanks :)

      Konos P--Yes. There is a subtle difference in flavor and I found octopus to be somewhat "chewier" than calamari. I have an excellent recipe for a pasta salad that features calamari.

      If you can find a fishmonger they might have them. I live in a coastal town in Sweden and the only place I can find octopus is really dodgy looking ones in asian supermarkets that I'm not sure I want to eat and at fishmongers.

      Damn thats a shame! Here in Greece we eat octopus all the time! It has a very strong taste and if cooked properly it has the best texture! The most common recipes (appart from the one Akis showed) are either boiled in vinegar or simply grilled. Anyway, you should definately try it sometime :P
