  • How A Chef Cooks Octopus From Costco: Grilled Octopus Salad Recipe
    Hello! I’m Chef Rafael Gonzalez and in this video, I’m showing you how to use Costco Octopus to make a delicious grilled octopus salad from home. This is a simple recipe that is perfect for a light lunch especially during the spring and summer.
    You’ll discover how simple it is to cook octopus just like a chef with my simple marinade recipe. This marinade can also be used to make a light pasta when you are all done with the grilled octopus salad. Costco octopus is already cooked so it takes very little prep time. I like to cook octopus in my cast-iron pan to give it a nice charred flavor.
    Have you tried the octopus from Costco yet? At certain times of the year, you can also find them at Trader Joes, but Costco has them year-round. I like to buy them in bulk so we can enjoy them at home anytime.

      Oh hey there! Thanks for stopping by! You absolutely must try octopus especially with the weather warming up. I hope its warming up where you are. It's got a mediterranean feel to it. I also make it with more of a Spanish flair. I'll be sure to document that one, when I make it again. Just some techniques I learned when I was a young cook in Barcelona back in the day 😅

    My only feedback would be, show us from the beginning unpackaging and explaining the octopus for us newbies that are clueless on octopus, but are eager to learn. Luckily, I read thru the comments and found where you stated that it’s already cooked when you buy it at Costco, which is a lot less daunting for some of us. Thanks Chef. Great video. Going to my local Costco today hoping to find some octopus.

      Hello! So sorry I haven't been active here as much I'd like to be! Been working a lot with my students but I will be sure to add more details in future videos to help you guys out. I hope you found the octopus. During the summer months they're also available at Trader Joes. But year round, I'm able to get them at our local Costco, here in Houston.     Hi again, I made the remainder of the octopus again tonight, but this time used your marinade recipe and searing instructions. After marinating, the pulpo, I used the remaining marinade as my salad dressing on an romaine and radicchio salad. All came out great. I'm pretty sure the marinade/dressing will go great on a rack of lamb too. That'll be next.

    Trying this with three baby octopuses tomorrow. I have fresh sweet 100s to fix with it. I will thaw the octopuses overnight and fix tomorrow with fresh herbs. They're vacuum packed and will be excellent. Hopefully, they'll turn out delicious.

      I did the same. I think it would be more tender if fresh. I used my home made parsley pesto. A touch of lemon and white wine. Great!

    This evening's dinner was octopus from Costco. The package said "ready to eat" so all I did was make a lemon vinagrette to put on it. There's certainly enough leftover (plain) for me to try this. If I had seen this first, we'd have had this for dinner tonight. My first question to you is that the only octopus I've ever seen at Costco is the prepackaged "ready to eat" tentacles. Is this what you used? Second, my other thought is to cook this for at least an hour or more in a fra diavolo sauce. My thinking here is if it's anything like squid, then long-simmering in a sauce will make more tender. Am Ion the right track?

    Do you have to wash the juice/gel from the octopus? Isn’t it included in the nutritional label since it’s the “natural juices” from the octopus?

    If anyone else is watching this and wants to try as Costco isn’t really in much of the world I would advise finding a video showing how to cook from fresh. It should be poached for a few hours slowly in order for it to be tender. Also it will probably be tastier from fresh than already cooked from a shop. I’m lucky enough to live five minutes from the beach with local fisherman. The vinegarette looks nice.

    I think it should have been mentioned that this octopus has been pre cooked before it was purchased. Maybe I missed that part. Try this with fresh octopus at your own risk!

      Glen, yes this octopus is available packed and pre-cooked from Costco. Do you have a Costco in your neighborhood?

      @@ChefRafaelGonzalez No mate, I live in Australia. Our octopus is raw and or frozen and not easy to find in the North east of Victoria where I am. There is a place where I can get fresh octopus, it’s not cheap but well worth the money.

      I have made fresh octopus. It is great to make fresh as there are some traditions not sure if it works but fun to try. Bring the poaching liquid( add flavor to the water) to a simmer and dip the tentacles for about 2 second and so it 3 times so it does not curl so much. Also Spanish people drop a cork in the liquid do not know what it does. Depends on the size after 30 minutes test with a pairing knife in its thickest part, if it comes out easy it is cooked. Cool down then sear to serve. Let know if you try it at home.

    Too much added salt. Olives, capers have salt in their curing method. Too much added sodium in diets is not good for people.
