I cook octopus quite often as it is my favourite dish. My favourite recipes with octopus are the Portuguese style salad and obviously THE monument of Spanish cuisine the pulpo a la Gallega so your recipe will now be in my repertoire ! Something very important when you cook octopus is that consider that a good one third of it will ‘ disappear ‘ . I weighed them few times before and after boiling and always come to the same figure so it is to take into account for the quantity needed like if you need a kg of cooked octopus you will need a 1.5 kg one . Also as you said the European ones are really good especially the brand ‘ El Rey del pulpo ‘ , really top quality .

Second question is if it was fork tender coming out of the boiling water, how does grilling it longer not overcook it just for the sake of a "grill flavor"? The belief is that the cork will release enzymes that settle between the octopus’ particularly long protein chains, thereby preventing clumping and guaranteeing tender meat. But there is a catch: corks are treated and boiled before being used to seal a bottle due for hygienic purposes. The often quoted recommendation to use a white and not a red wine cork does not change this.
