RAINBOW PEANUT SALAD | Fresh & Juicy Protein Rich Peanut Salad | Salad for Kids Lunch Box

  • This Rainbow Peanut Salad is filled with colors, freshness and protein which make this salad a complete meal or a delicious, fresh and healthy snack, is relatively high in protein, rich in fiber. This Salad is a good lunch recipe for kids who avoid to eat peanuts. This is my sister recipe which I have tried at her place and I LOVE IT !!
    Try this fresh peanut salad in your daily diet or serve in the party.
    Ingredients
    1 cup Peanut
    1 chopped Tomato
    1 chopped Cucumber
    1/2 chopped Mango
    1 chopped Apple
    6-7 chopped Strawberries
    1 Lemon
    1tsp Roasted Cumin Powder
    1/2 tsp Black Pepper
    1 tsp Chaat Masala
    Some freshly chopped Mint
    Some freshly chopped Cilantro
    1/2 tsp Salt
    Method
    1. Boil ~3 cups of Water in a pan, bring to boil.
    2. Add 1/2 tsp Salt.
    3. Transfer raw peanuts and cover with lid for ~25mins on medium low flame. (You can pressure cook as well, take 2 whistle on medium flame).
    4. Switch off the gas, let this rest for ~10mins to completely cooked.
    5. Peanuts should be soft and tender.
    6. Strain the water and keep aside the boiled peanuts.
    7. Let peanuts cool down to room temperature.
    8. Transfer boiled peanuts in a mixing bowl.
    9. Add chopped tomato, cucumber, mango, apple, strawberries into the bowl.
    10. Squeeze fresh lemon.
    11. Add roasted cumin powder, black pepper, chaat masala.
    12. Add freshly chopped mint and cilantro leaves.
    13. Finely give it a good toss.
