How to Make Marble Cake

  • Soft, fluffy, moist marble cake, made with vanilla and chocolate cake swirled together.

    Ingredients
    4 oz semisweet chocolate bar finely chopped
    1/2 cup unsalted butter softened (113g)
    1/2 cup canola oil (or vegetable oil) (120ml)
    1 3/4 cup granulated sugar (350g)
    4 large eggs room temperature preferred
    2 teaspoons vanilla extract
    3 cups all-purpose flour (390g)
    1 Tablespoon baking powder
    3/4 teaspoon salt
    1 1/4 cup buttermilk room temperature preferred (300ml)
    Chocolate Buttercream Frosting
    1 cup semisweet chocolate chips (170g)
    1 cup unsalted butter softened to room temperature (226g)
    2 cups powdered sugar (320g)
    1/2 teaspoon vanilla extract
    1/2 teaspoon salt
    2 Tablespoons heavy cream

    Instructions
    00:00 Introduction
    00:16 Preheat oven to 350F
    00:21 Place chopped chocolate in a microwave-safe bowl and microwave for 30 seconds. Stir well, and then return to microwave and heat in 15-second increments, stirring well in between, until chocolate is completely melted and smooth. Set aside.
    01:18 Using an electric or stand mixer, cream together butter, oil, and sugar until light and fluffy (about 30 seconds on high speed).
    02:09 Add eggs, one at a time, beating well after each addition. Pause as needed to scrape down sides and bottom of bowl.
    2:32 Stir in vanilla extract.
    02:40 In a separate, medium-sized bowl, whisk together flour, baking powder, and salt.
    03:17 Using a spatula and gently hand-mixing, alternate adding flour mixture and buttermilk, starting and ending with flour mixture and mixing until just combined after each addition. Do not overmix!
    05:59 Pour 1/3-1/2 of the batter into a separate bowl and add chocolate mixture. Stir until completely combined and batter is evenly chocolate.
    06:46 Generously grease and flour two 8" round cake pans (you may instead use 9" pans, just keep in mind you will need to bake the cake for about 5 minutes less than indicated). Set aside.
    07:28 Alternate adding vanilla and chocolate batter to each pan, evenly distributing batter into each pan. Use a knife to swirl for marbled appearance.
    08:25 Bake on 350F (175C) for 30 minutes, or until toothpick inserted in center comes out mostly clean but with a few moist crumbs (do not over-bake or the cake will be dry, you want there to be a few crumbs).
    09:05 Allow cake to cool for 15 minutes before carefully inverting onto cooling rack to cool completely before frosting.
    Chocolate Frosting¹
    In a microwave-safe bowl, microwave chocolate chips at 15 second intervals, stirring between intervals, until chips are completely melted. Set aside and allow to cool slightly (about 10 minutes, stirring occasionally).
    Cream room temperature butter with an electric mixer. Stir in slightly cooled chocolate and beat well.
    Gradually add sugar, scraping down the sides and bottom of bowl occasionally.
    Sprinkle in salt and vanilla extract, stir well.
    Gradually add heavy cream, increase speed to high and beat for 1 minute.
    09:25 Spread a thick layer of frosting over the top of one cake round and sprinkle with mini chocolate chips. Top with second cake round and evenly frost cake. Slice and serve.

    Guys PLEASE give this a shot! She is 100% right, this is the softest pillowy cake! I think the ppl who get it wrong are inexperienced in baking tbh. I’ve been baking and selling cakes for years and it came out superb! Great taste and texture ♥️

      @@SugarSpunRun we just tried it, my S/O loved it but I believe I over mixed it, it ended up with a pound cake feel, very dense but doesn’t taste like corn bread! Also I didn’t like that I used semi sweet bakers chocolate in it, it gave the chocolate a really bitter taste to me. I know for future tries!

      You can make the buttermilk substitute. I prefer to use the store bought stuff if I have it because it's always just a bit thicker than when I make it at home. :)

      You may want to increase the recipe for the frosting a little bit to ensure you have enough. :)

      Yes, a typical box cake makes a 2 layer 8 inch cake. 😊

    Can you use cake flour instead of all purpose flour for this recipe if so would cake flour give it a better taste?

      You can use cake flour, but it won't change the taste at all. Cake flour will give you a tighter crumb. If you substitute cake flour you need to make sure to substitute it properly. If using weights, the weight is the same. If using cup measurements, you need 1 cup + 2 TBSP of cake flour for every cup of all purpose flour. :)

      I typically recommend using it up by the end of a week. I keep it in an air tight container at room temperature. Obviously the fresher it is the better but it should still be really good for about a week. :)

    This is undoubtedly a silly question, but how are you able to cream your butter without it flying everywhere? I end up using my stand mixer because no matter how large a bowl I use ... and my butter is softened ... it takes forever and ends up everywhere?

      I had found that the shape of the bowl makes a big difference. I started with a 4qt Pyrex bowl which was wider and shorter and things would get messy. Got a 3qt stainless bowl which was narrower and taller, and in spite of being a smaller bowl by volume, it works SOOOOOOOOOO much better with my hand mixer. The height helps a LOT to keep the mess at bay!

      Unfortunately I don’t recommend using cocoa powder with this recipe because it dries out the cake 😕

      You can just scoop it into cupcake liners. I'm not sure of a bake time on it though. The temperature will remain the same. :)

    Question....my yellow and white cakes always come out really moist and delicious BUT everytime I make a chocolate cake they always seem to come out rather dry.....how can I get my chocolate cake to be as moist as my yellow and white cakes?

    I made the cake with the frosting tasted delicious but in the frosting the sugar didn't seem well blended . Still there were some sugar particles and I think the frosting could you some less sugar

      I’m glad you enjoyed the cake. Typically mixing the frosting a little longer will help get that sugar worked in. If you cut the sugar your frosting won’t be as sturdy

    How long does it take for the marble cake to cool before putting on the icing? Do you recommend cooling at room temperature or in the fridge?

      It really depends on your environment. It can take a good while to cool. Just touch it occasionally to see if it's still hot. Always let it rest at room temperature. :)

    Halfed the recipe but ended up adding less milk and a bit more flour to get the same consistency as shown in the video the cake, turned out good taste wise but my cake cracked from the top. Dw what I did wrong

      Hmm sounds like the cake was too dry from not enough milk and too much flour, or the cake was over-baked. You shouldn’t need to alter the ratios to half the recipe. I’m glad you still enjoyed it. 😊

    ugggggggggh, I was all gung ho to try this recipe until you kept stating that it was soooo important to not over stir or under stir. GAH. Who wants to take that chance? NOT ME. Sorry.

      @@SugarSpunRun half cup or single half cup. But I’m Canadian so that might be a little cultural language barrier. Just took them out of the oven they look good 😍 first time making a cake from scratch

      I believe it should have baking soda.
      I think the oil makes the cake too heavy.
      My daughter and grand daughter like the cake but, my son tokd me the texture he didn't like.
      I don't mean to offend you sorry.
      I made many cakes over the years.
