Boquerones - Spanish tapas: how to make anchovies in vinegar

  • Hi everyone, I’m here with a new Fishy Friday! So glad you’re watching! Happy to see you back in Cadaqués, Spain! Together with my daughter Juul and son Ties I’m making one of their favorites: Boquerones, a delicious tapas which is anchovies cooked in vinegar!
    We use amazing anchovies caught here in the Mediterranean Sea. Once you filet them and put them in the vinegar the fish meat is going to cook due to the acid! This makes the meat all white, soft and soo tasty. Some rich olive oil, parsley, garlic and salt to top it off and we are ready to eat. Juul and Ties absolutely love this and could eat a whole plate! I can’t blame them, it’s easy to make yourself and the flavors are just incredible!

    It's nice to see you involving your kids and enjoying warm Spanish weather (it's snowing here 😀). I wish we had access to fresh anchovies here as I would love to try this recipe.

    This is almost how we do things in Sweden with herring (not the big ones you get down southern Sweden, the smaller one up north! Like the ones we ferment, remember?). Fish that we know and love so much. So good when you make that pickled herring... Love! It really is love.

      Yes, fully know what you are saying (the fermented ones). Love the way you treat fish in Scandinavia. Simple and pure flavours.

    Zo leuk om te zien dat jouw jonge kinderen hier ook al zo gek op zijn en weten hoe ze het moeten maken 😍 elk kind zou op deze manier kennis moeten kunnen maken met nieuwe smaken ❤️🐟 Dankzij mijn ouders eet ik al sinds mijn 2,5 olijfjes en ben ik gek op quasi àlle internationale keukens; Mediterraans/Oosters/Aziatisch… vis/vlees ALLES!

    Are you using a 5% acidity vinegar or is it something higher?

      Yes, you can! It will give the anchovies that specific flavour.

    Nice video. Im a little bit rougher, i just remove the head from behind and then scrap the guts and remove the backbone with my thumbnail. I was taught this by a 65 year old guy in torremolinos ( malaga)and his father owned a chiringuito on the beach for all his life. He didn't actively wash them either only submerge them in iced water for ten mins. I must have eaten 1000 kilos of these. so far my favourite way to eat the little beauties.
