Refrigerator Pickles recipe - easy and quick method to making delicious pickles!

    I love acidity in my foods. Which makes these quick refrigerator pickles so great! You don’t have to worry about canning and also they’re ready by the next day! I like to make these in bulk to munch on throughout the weeks.
    3 32 ounce mason jars worth.
    Edited: I changed the ratios a bit after making these a bit more times. I wanted to tone down the acidity and add a bit more sugar.
    Ingredients:
    3 pounds cucumbers, I prefer to use Kirby
    2.5 cups water
    2 cups vinegar
    2 tablespoons salt
    2 tablespoon sugar, add a lot more depending of preference
    Garlic, to taste
    Peppercorns, to taste
    Mustard seeds, to taste
    Fresh dill, to taste

    I, too, live for that CRUNCH lol. When you finish a jar, save that brine! I recycle mine (just filter it) and re-add salt and water as needed.

    I think the presalting is more important for the larger cucumbers. Yours are smaller and firmer so not much water to drain from them.
    I also reuse my brine for quick pickled onions; just slice a white or red onion and put into the brine for an hour or two and it’s great in sandwiches for a sour crunch 👍
