Another great woman on UA-cam to get great preserving ways from and making about anything from herbs, spices, seasonings, broths, fermenting etc and all done the Old Fashioned way is, "Whipoorwill Holler!" Listening now, and all I can think of is the Andy Griffith episode, "The Pickle Story". It's very funny if you haven't seen it. Aunt Bee makes pickles that are nicknamed "kerosene cucumbers". 🙂

Too funny. I said the same thing to my husband when I tasted them. I remember watching that episode of Andy Griffith and eating a whole jar of pickles afterwards and then not feeling very well. Loll such good memories.
My daddy talks about that episode every year I tell him I have cucumbers coming in. Lol

I don't know if any of you viewers noticed that the 3rd jar she filled with cucumbers, she forgot to add the tsp. of alum to that jar 😮. It is the jar that she stuffed in the smaller curly shaped cucumbers to the top. It's probably not too late to get that one and the alum to it then just put it in the fridgerator. I'm not sure, though. Hopefully, she catches the comment 🤔🤔❤️🫢

Hello from The mountains of N E Ga. I have been making dill pickles for several years and I started with Mrs. Wadges mix. They were good but not what I wanted. I have just started my fermented kraut which will take one month of fermentation. I will now start my dill pickles. I ferment usually about 10 to 14 days using an air lock on the quart jars. For the crispiness I add tannins in the form of oak leaves. I have a fridge for all my finished dill pickles. Even at a year or year and half or longer I still get that wonderful crunch. I will stay with the fermentation method mainly because if the pro biotic benefits. Thank you for your wonderful videos. Mike Fuller

I like a grilled ham and cheese with crunchy dill pickles!
A great tip is your recipe should use half the amount of dried herbs to the full amount of fresh herbs. So if he used 1 tablespoon of dry dill you should use 2 tablespoons of fresh dill. That works perfectly for all types of recipes.

Tipper, I enjoy watching you prepare foods. My wife and I both helped our mother's get pickles ready for the "fruit cellar". What wonderful memories. My mother passed back in 1970. Sadly, the two mothers never met. My mother-in-law lived to 106, and passed in 2012. What a great Lady she was. She lived with us for 25 years - such a blessing for our children. Thank you for this video. It took us both back to our childhood.

12:33 I add garlic to the dill pickles I use for potatoes salad and onions for eating dill pickles. I also eat the garlic and the onions beside using them for flavoring. Onions are a very healthy food to eat.
I have watched Justice Medcalf ever since you mentioned him. What a joy to watch you and then switch over to him, it makes me so happy to spend time with people from where I was raised. Because if folks ever saw how mass-produced, store bought pickles are produced, they’d *never* buy them again. They’re left in HUGE outdoor vats, *uncovered* … no lie… dust, bird droppings, bugs and all can easily get into the vats. For anyone curious, just search “commercial production pickle vats” to check it out for yourselves.

Over the last 5 years or so, you can't find a decent pickle in the stores in Massachusetts anyway. You can tell, especially the bread & butter pickles, its just sugar water, I guess. Terrible. I used to be CRAZY about them, buying 2 jars at a time. Not anymore. I made them 1 year, when I grew them...once...gotta try it again

I have watched Justin's video since you mentioned it before, and I subscribed. It's a great channel. I think the alum is probably the key to good dill pickles. My grandmother always used alum in her pickles, but it seems like over the years that has become more rare.

❤😊 Hey, Tipper & family! I am new to your channel, but let me tell you...I love y'all!!! I am a 60-year old southern lady from the Great state of Tennessee. We are only about 3 hours away. We live about 60 miles from Nashville in the country. My husband is retired , LOL, but raises black Angus cattle. We have been married for 36-years. Our children have four paws. Maximus is a Chiweenie, and cute as a doll. Spoiled to pieces, and loves watching TV with his Mummy. I told him to help me remember this recipe since the last few years my memory has taken leave of my body it seems. I am gonna try this recipe tomorrow with the cucumbers I have left. I think I have enough to do a few quarts. Thank y'all for being who you are and sharing yourselves with us. My husband and I are just another good Ole Southern born & bred couple trying to do the "right" things to please our Lord and be good to our fellow men & women. God bless all your family. I made these a month or two ago after listening to you all rave about them. They are the best pickles I’ve ever made. The garlic turned blue which was pretty funny, but not harmful. Thank you so much for sharing this!!

Another couple of tips for crunchy pickles is to 1. Cut off the blossom end of the cuke (about 1/4 inch) as it contains the enzyme that softens the cucumber, and 2. Add grape or oak leaves to the jar to keep the pickles crunchy.
One way I love to use up dill pickles is to make dill pickle soup. Delicious!

I grew my own dill for the first time this year and fresh dill makes such a wonderful difference in the taste.
They look delicious! I've only made bread and butter pickles. And that was years ago. I prefer dill pickles, and anything sour. Thanks, Tipper. ❤

In the 1960s we raised 3 plus acres of cucumbers yearly for the M A Gedney pickle company. The money I made financed four years of state college. Mom made this pickle evey year and they were always good and crisp. Did not know Mom was a rebel canner.
My jars that don't seal due to a slight defect in the rim get graduated to "drinking glass" as long as the defect isn't sharp glass 😊
I’m a fan of Justins dill pickles too. Made them last year and have made some this year. Had been thinking about spears and slices. Think I might try them too. Thank you for all you share.

LOVE these pickles! Just finished making my second batch of 4 qts. as I keep them in the refrigerator. I cut them in the round and halves to fit more in the jars….they’re ready to eat in a day . Gonna try green tomatoes with this recipe. Thank you! ❤🥒
Very interesting...when I made dill pickles I'd fold the dill and the stems and put it in the bottom of the jar followed by the garlic and alum....I always used only the small ones. I am anxious to see/hear how the bigger ones turn out and the cut ones! Great video!!
Great video Mrs. Tipper! I would Love to learn how to can and make pickles one day. My Great Grandma canned, but she was the last one in the family who did. My Mom knew how, but didn't, because we didn't have a garden.
I just made 4 quarts of these. Haven't tried them yet, but I'm sure they will be good. I used to do my tomatoes with the open kettle method and never had a problem. Such an easy recipe and can do a few at a time! Thanks Tipper!

I have been using the Ball Pickle Crisp in my pickles this year, because mine were mushy that I put up last year. I am hoping the Pickle Crisp will work like the Alum to make them crispy this year. I will have to try this recipe when I get more cucumbers. Mine are about done for this season.
This is almost exactly how my grandma and our whole family have always made dill pickles. The only difference is we don't use garlic and the vinegar and water ratios are different. I was so excited to see this video. I have great memories of my childhood sitting on my grandma's porch swing with my cousins eating dill pickles! For some reason she mostly canned slices, and yes they stayed crunchy. I think the alum is the secret. We ate so many my grandma canned them in gallon jars😂
I know you all will enjoy them all winter. We also make the 14 day pickles, I shared last year about how we put the green food coloring in the 14 days. We love using them in macaroni salad. Thanks for sharing!

I made Justro's dill pickles last year and I'm doing Justro's dill pickles this year. They are the BEST Dill Pickles ever. I also make the 14 day sweet pickles. I'm so glad I found your video site for I do sure LOVE you and your family and recipes especially the pickles. I will as long as I make pickles will think about Ms. Cindy and Justro and his Mom for the BEST PICKLES EVER. and you Tipper for sharing. This is very similar to my dill pickle recipe! I add the tablespoon of alum to the liquid and also add a dash of red pepper to each qt jar. TFS. They are delicious! ❤️

I made these pickles last year after watching this and Justins video. Best darn pickles ever! I cant tell you how many recipes I have tried over the decades. I finally found the perfect pickle. Crunchy, even 10 months later! We just opened one of our last jars the other day. And I am inspired to grow lots of cucumbers this year. Dont forget to grow the dill too!
My family came down from W. Virginia to Kentucky then to Missouri after the war. This is almost identical to how we make them with one acception, with ours
we add one dried red chili pepper down in the bottom before the other garlic and dill and pickles. So good!!

Y’all - I’ve been looking over the subject video Tipper refers to, and apparently his name is JUSTRO. I kept hearing and reading Justin, Justed, etc. but when I ran onto this video that said Justro messed up, or something like that, I thought oh my goodness! Have we all got his name wrong? Thks for sharing the recipe. I have been looking for a dill pickle recipe because the ones I looked at were so involved. I have made bread and butter pickles using the Rebel Cannon way.
UNKNOWINGLY !!!!!!!!!!!!!!!!!! In other words I read an easy recipe and tried it. Worked for me. Never thought anything could happen. If my garden produces enough cukes I will try this for sure. I love crispy dills too. And yours did look so pretty too.
I also add a few wild grape leaves to each jar. Helps keep crispy. Also read to cut the ends off to keep them crispy too. About the enzymes
Yes, the grape leaves add tannins that help with crispness. Only the blossom end needs to be cut. It is the one with the enzymes
I follow another gardner / foodie and he shared a simple dill pickle receipe and I made some...they are delicious and very crisp...there is no canning process so they will only be stable refrigerated for 3 to 4 weeks.
Them pickles look good and easy to do!
My wife and I use the Alum in both dill and bread and butter (my favorite) pickles to help them stay crunchy. Another thing that helps, and I don't remember where we heard about this, is to cut off the flower end or the cucumber because there is something in that end that will cause the pickles to not be crunchy, and it does work, no matter the recipe.
My husband is making pickles right now with cucumbers I grew, while we’re waiting on some slow cooked green beans to get done ❤️

These look and sound delicious. I need to try them. I found a refrigerator dill pickle recipe a few years back and tried it. It had a little sugar in the recipe, which made me skeptical, because I don’t like sweet pickles. They were delicious and my family loved them. Looking forward to trying these. I make refrigerator pickles all summer long. I don’t have space for storing home canned foods. We love the recipe I use.
My Aunt Dorie’s kitchen always smelled like dill in the summertime. She constantly sought to keep her pickles crunchy. Honestly, sometimes they didn’t keep their crunch. We’re up to our ears in cucumbers currently, so I’m going to try making these. I’ll go watch the originator’s video as well.

Tipper, I noticed that on your 3rd Jar of quart Pickles, Sweetheart you did'nt add the Alum... I even went back and watched it and I never saw where you added it. It was at time stamp 19:45... I don't know how you'll find which one it was unless you look how the cucumbers were arranged in the Jar! I wanted to call you so bad and tell you but I couldn't! We tried ours today. A couple jars I added a few crashes red pepper flakes. We tried the regular and the spicy. Everybody said they're blue ribbon jars. I'll definitely be making all mine like this. Thanks so much. Prayers for Granny.

Happy to see the pickle recipe today. I've got old cookbooks that call for alum. Fell out of favor I guess. One of the interesting things about open canning is lots of other countries do it. I have cooking friends in England, Greece and Australia that only do open canning or Hot Water Bath for non pickled veggies. Some can't even buy Pressure Canners. So lots of folks in my canning group feel the USDA requirements for canning are the "very safest" but canning the old-fashioned way won't harm you. Can't wait to see the unveiling of your pickles in a few months. Blessings to all!
