💚 Quick Refrigerator Pickles Recipe
From The Prairie Homestead Cookbook: www.homesteadcookbook.com
Per Quart Jar You Will Need:
1 cup water
1 cup vinegar (white or apple cider)
1 tablespoon fine sea salt
1 tablespoon organic sugar
4 to 6 cucumbers, depending on the size (about 2 pounds)
2 cloves garlic
3 heads fresh dill or 1 tablespoon dried dill seeds
1 tablespoon yellow mustard seeds
1⁄2 teaspoon black peppercorns
1 bay leaf
Combine the water, vinegar, salt and sugar in a small saucepan. Bring to a simmer and stir until the salt and sugar is dissolved. Remove from the heat and let cool.
Trim the blossom ends from the cucumbers and cut the larger ones into spears, if desired.
In a clean 1-quart jar, combine the garlic, dill, mustard seeds, peppercorns, bay
leaf.
Pack the cucumbers on top. Fill the jar the rest of the way with the brine, taking care to cover the cucumbers completely.
Cap tightly and shake well. Icebox pickles can be eaten just a few hours after you make them, but the flavor vastly improves after at least 48 hours in the fridge. These pickles will last about 3 months, but the garlic flavor will intensify and the pickles will increase in spiciness the longer they sit in the refrigerator.

Thanks for watching! Check out the video description for the FULL recipe!
There was something crawling across your counter when adding the dill in 5:21.
Lol thanks for that! What happens if you don’t add the sugar, I’m prediabetic so I eliminated it in my jar. Also does large whole uncut cucumbers take longer in the fridge to ferment?

Your recipes are the best. REALLY!!!!!!!!
These are the best pickles my husband and I have ever had!!
Thank you for this, I had never heard of this method until I found this video.
Much easier and faster than canning.
Ive been trying so hard to wrap my head around all the recipes/videos all around and this is the one that clicked. Easy, concise, clear, thorough. WELL DONE!!!!!
I agree and now I am going back to the kitchen and give it a whirl.lol.Well done Young lady, from a 70 yr gardener.
u still alive granny ?@@maryannholmgren3076
They always say the Apple Cider Vinegar changes the flavor, I always use white vinegar, and always put my garlic on the bottom of the jar. Fresh drill is always the best.
Especially if you can find them with the flower….tons of dill flavor 👍🏻
Great tip on the brine, didn't know till I looked it up that the pickling brine can last 6 months in the refridgerator. That just refilling that brine with replaced cucumbers. Saves on making the brine each time. Pickled cumumber last 3 weeks but the brine it self last 6 months.
I will give this a fly! Oh, I mean, a try!
😂
Just made your recipe, first time trying canning. A buddy gave me huge cucumbers from his garden, I cut out the seeds and followed your recipe. They are so good! Thank you
The fly out there like the co-host, they forgot his Mic 😂😂😂😂
That was just gross fly 🤮 FLIES !
@@bbgirl6741 COUNTRY LIVIN'

I saw that too. Thought I was seeing things. VA here ,too.😊
In a farm kitchen, flies come with the scenery. It happens!
Refrigerator pickles are the BEST! Easy and crunchy. Yum!😍
This is amazing! My granny always used to make sweet fridge pickles and I guess I just got it in my head that was the only kind you could make lol. Can’t wait to try these! Thanks!
This vid cleared up a few questions I had concerning the difference between fermented pickles and pickling using vinegar. This year I’m doing both.
Great recipe. This one is a keeper!

I assume you mean a 4 hour ice bath for the cucumbers before you pickle them? Do you cut them first then pickle them or ice them first then cut them?
I just made my first quick pickles with your recipe ! I can't wait to taste them thank you very much😊

Very informative. Enjoyed your video !!! Keep up the good work !!!
Excellent! 🥒
alright nice I'm gonna try this
I always take the blossom end and have had great results. Thank you Jill.
Where do you take it?
I've made these pickles several times now, they are excellent. I do use white vinegar and go a tad bit heavier with cane sugar. Very happy to have found this video.
A friend brought me a jar of sweet and sour pickles. Loved it but she won’t give me the recipe. Glad I found this one. How much sugar did you add to her recipe to make it sweeter?
Good job. I've done similar but, will try this, definitely.
friends on the corner of the countertop. Nice addition. We do love your videos.
Thank you for making this video! Just made a jar and now patiently waiting 48 hours.
I made these pickles and followed your recipe it's so good thanks 😃
Delicious ❤
Super simple, I'll write it down this time. Beans are fantastic in this brine so is cauliflower!
Great video, I now got the difference between three kinds of pickels😊. Best video on vinegar pickle ❤
the fly at the beginning tho bzzzzzz 🪰
Just made a jar of these refrigerator pickles. I’ll check them out in 48 hours. Thanks!
Yummm making it soon!!!
Awesome!
i ❤️your recipe!
Wow! They are really good. Ive tried other recipes and Im very pleased with the simplicity and flavor of these. Thank you for the recipe :)
Lol I love that you said "icebox" in the description 😊
I had a recipe similar to this which I lost. I looked all over for it on the net. Great, Thanks.
Wowser. I didn't know it was this easy. My belly will be happy soon.
The reason you cut the blossom end is because there is an enzyme there that will make the pickle soft (and apparently not safe to eat when pickled). Me, I have cut both ends when I pickle so that the brine has a faster rate of getting into the cucumber.
The flys flying around are so distracting 😂
I love all you videos !
Yeah.... they are a nightmare this year!!
Just focus, and you’ll be fine! 🤨
Flies are bad down here in Texas as well, Why and where are they coming from?
I agree. They kept catching my eye and I hoped one didn't land in the pickle jar when she turned her back!
Redmond’s “real salt” is my favorite too. I know people that use that for kraut and all kinds of other things. It is mined in the US and does not contain any kind of refining and they use high-quality non-nickel or aluminum equipment to mine the whole “raw” unrefined salt. Because its mined in the USA, you know that it is going to come from a real ethical source.
Thank you!
Hi from jamacian i didn't have dill but it was delicious with just the rest of the ingredients I loved it my kids loved it
Made this wonderful recipe, the wait begins. I’ll let you know how they turned out! Thanks!
I am back again!! I can’t believe I forgot to like or comment!!! 😂First things first.... they won’t last months!!! Since I first tried this recipe....I have to hide the jar in the fridge long enough for the cucumbers to actually get the pickle flavor!!! Living in Alaska, I love that you use dried herbs as sometimes that’s all we have!!! Thanks for sharing this recipe!!
Fabulous
This video is so good and helpful. I also used apple cider vinegar. I like your kitchen.
Great presentation much luv ❤can't wait to eat😋ty
Thank you, Jill!
Did up carrots last night with this recipe. Can’t wait to try them. 😋
Awesome

And a kitchen full of flies. Yummy.
Love these been making them for months. We just omit the sugar.
