Pro tip: If you just want the camera to follow a circle, you don't need to bother with the "follow curve" constraint. Just make an empty (circle), and parent the camera to the edge of it. Then you can just rotate the empty (circle), and you don't have to fiddle with the offset value. Much easier and more intuitive to animate.
This is super helpful. I was just thinking to myself last night how I could achieve something like this, and BAM! Ducky saves the day again.
There is a builtin addon Camera: Add Camera Rigs, that you can enable in the Add-ons section in the preferences. Compared to this very simple rig, it doesn't really animate anything except the "look at" constraint, but they also add things like focal length and buttons for adding markers to the timeline

Another way (lazy one) of getting perfect camera orbit is parenting cam to an empty and rotating it - you will get perfect 360 spin. TrackTo can be added for additional control.

In Blender 3.5, the tooltip for "Track To" says it's a legacy feature. Is there some other new constraint that is replacing it? I'm new to Blender so I really don't know.

Unfortunately, when I constrain a Camera to follow a path, the camera shoots off into the distance and is nowhere near the path
