I have tried to find a recipe for the cream, but it looks like pole beans mashed with cream and Mizuna (mild, peppery). If I were making it, I would choose Karashi (mustard) powder or Shiso (Japanese Basil). The clam dish is most probably Yosenabe.

My ancestors are from the island of Maupiti and we dont eat Mahi Mahi due to a story.....
A tourist couple went to Maupiti. In Maupiti locals use to catch Mahi Mahi, that was one of their favorite fish to eat.
One day the couple went for fishing, the husband not noticing where his wife went for a while started to search for her. He find her battling for her life with a a big Mahi Mahi, the fish swallowed her. He cried so bad because he couldnt find the Mahi Mahi anymore, he called the village to help him look for his wife. One guy came back from his fish hunting caught a Mahi Mahi, a huge one, the one who ate the wife. The fisherman was surprise to watch his people moaning the lost of the tourist woman, but his fish was still living as if trying to get back in the sea but the fisher man didnt let go. The tourist husband told the fisherman to let go of the fidh because his wife was inside, The fisherman didnt believe him but instead he just let the fish in a big bassine of sea water. The husband looked closely the fish and could see the shape of a body in a feotus shape. He knew the wife was there, dead. From that day Maupiti people never hunt the Mahi Mahi. That reminds them of the woman inside the fish and to respect the husband they chose to never eat that fish even outside of the island. If you notice, thr Mahi Mahi once caught, even dead he is still crying. Tears still falling from its eyes, and that for the Maupiti people these are the tears of the wife.
So no matter where I go, the country I visit I never eat Mahi Mahi.

Living and fishing in Hawaii I’ve caught and cleaned literally hundreds of Mahi. Never heard of anyone scaling a mahi though. You cut thinly up the back and belly(never cut though the guts) then you grab a cut flap of skin near the head and pull the skin off towards the tail. Done. It won’t work though if you try that fron the tail end. Pull head to tail and that’s it. This guy obviously doesn’t know much about mahi. But the dishes looked great. Aloha no kakou.
