One specific is the 4 pound Chuck Roast and also the Rib eye roast? I thought I would have a wider variety to choose from if I picked from the custom box option !!!_*

Exactly correct. If the cuts aren't a choice it means they're out of that cut. I wanted ribeyes and that was not a choice. I called CS and was told there were none in stock.

Hey Jared, I plan to get one of these around Christmas time for my family. I live in Illinois and the website stated that boxes ship no more than 5 business days. How far ahead should I place the order? My only worry is that if it gets here too soon, the packed ice may defrost.

I can only speak from my experience. My orders ship out in 1-3 days after placing and they typically arrive the next day. Sometimes they take an extra day to arrive.
I would make sure you have extra space in a freezer and order your box 5-6 days in advance of needing it.

I have a question i just got my first box and i noticed the dry ice bags were all open as well as some of the meat was also opened up that would mean that the meat had contact with dry ice so its not edible

Sorry for the late response. If the meat was still frozen, it should be fine to eat. Dry ice is just CO2 and evaporates.
