Cherry Bakewell Tart Recipe | Cupcake Jemma

- As requested by you guys here is our recipe for Cherry Bakewell Tarts, a true British classic. A crisp and buttery Shortcrust Pastry case filled with Jam and a soft Frangipane filling and topped off with a simple Glace Icing and of course a Cherry! It may sound like a lot, and...well it is, BUT it's all super easy and really fun.
This recipe is enough for an 8 or 9 inch tart tin OR you can do it Sally's way with 6 little 10cm x 3cm tins.

For the Pastry:
Preheat oven to 180C (fan assisted)
200g Plain Flour (All Purpose)
30g Icing Sugar
100g Chopped Cold Unsalted Butter
1 Egg Yolk
1 tsp Cider Vinegar (or Lemon Juice)
2-4tsp Cold Water
Egg Wash (1 Egg + 1tbsp Whole Milk)
For the Frangipane:
Preheat Oven to 160C (fan assisted)
Raspberry Jam (or any flavour!)
100g Caster Sugar
100g Soft Unsalted Butter
2 Eggs
1/4 tsp Almond Extract
50g Plain Flour
85g Ground Almond
For the Decoration:
300g Icing Sugar
Cold Water
Red Food Paste Colouring
Glace Cherries

My wife and I found your videos a fortnight ago and you've honestly made lockdown so much more bearable. We ended up surprise ordering each other cookie kits on the same day and now we've gone all in and bought a stand mixer and what feels like our own body weight in chocolate chips! When you took a bite and laughed, I laughed too and then it hit me that I've seen you more than my own friends who used to make me laugh this past year. So of course I got a bit emotional. Haha. Thanks for keeping up the morale and being there for us. I watch your videos, obsess about the recipes, learn new things, hunt down ingredients to make them and then enjoy eating them. Great recipe and clear instructions , thank you . The almond flavouring is the “essence “ of the tarts so I wouldn’t even suggest an opt out .

I use a micro plainer to even out the top of my tart cases. I find it safer than a knife, but that is just my preference. I also made a cherry “goo” and used it instead of raspberry jam... so good 🤤
Sounds great idea with the cherry goo,pairing nicely with the almond,I can easily buy cherry conserve so I'll go with your idea

Perhaps it might be possible to make a Welsh honey cake. Great warm as is or cold with cream mixed honey decoration, also icing mixed with honey. As we say in Wales Lush!!!

Funny story: The first time I tried using weights for my pastry crust, I was around 10 years old, I had the information that you could use beans and it would work just as good as the fancy pie weights. What I had forgotten about the whole thing was when using ANY pie/pastry weights you must use grease proof/parchment paper. I...did not. Needless to say my little self was there picking pinto beans out of my pie crust for a long time and in the end the crust had a slight beany taste to it too. The whole thing was a flop. But I remembered to always use parchment from then on.

I was really enjoying watching, but then thought "what a palaver"....but I stuck with it and gradually started to change my mind. At the end I just thought "what a RESULT" !! You broke the steps down into bite size pieces (no pun) and then brought it all together. I'll definitely give these a crack...and if my family are lucky I might even save one for them !! (One each I mean. I'm not THAT greedy). Great video, Sally, and you are a lot of fun.
