    These look beautiful!
    Years ago, I used to work in a fancy hotel and they made wonderful tarts exactly like these. However, because they had to be prepared in advance, the pastry chef lined the baked shells with melted chocolate to create a barrier so the pastry cream wouldn't make them soggy. Once the chocolate hardened, he then filled with cream, added fruit, and glaze.

      Did they use weights to keep from the middles puffing up? I have perforated rings and my shells puff up so bad in the middle.

      Hey, nice tip! Also you can do the same with melted cocoa butter. Simple but effective and also cheaper than chocolate 😄

    When he says you will LOVE this recipe he is NOT lying!!! Frist time making this for me, I even messed up because I used regular sugar for the crust (by mistake) but carried on; my family did not even notice they all LOVED it!! They said "you gotta make save me one for later"

    Made these today - pretty good! I would reduce the sugar (it’s a tad sweet for me). If you want an extra silky and smooth cream, you can blend the custard & put it through a sieve!

      @@humss5884 Right when it starts to thicken up (like A LOT) and it starts to boil, and cook for about a minute more while boiling. The total time really depends on the heat. Also, you don't really need to count how many minutes, you can tell when it's done when it *really* starts to thicken and it boils. (sorry i'm soo late)

    My husband and I celebrated our 26 wedding anniversary. We normally have dinner at a nice restaurant but COVID-19 put a pause on that. I still wanted a nice dinner and these fruit tarts were the perfect yummy-licious dessert.

    I made this- truly everyone who ate it was Tartmatised. The base was heavenly although the custard filling didn't set due to my own fault of taking it off the flame soon however that recipe is perfect. Will make it again and make everyone tummy really happy. Truly thank you :)

    I love to cook but am a sensationally incompetent baker. (My attempt at a free form pie caused an oven fire, & when making a flan a Pyrex pan exploded, hurling shards of glass throughout the kitchen. I can make pumpkin pie & cheesecake - that’s it.)     I made these and they were delicious!!!! Although i found that there was too much sugar in the creme pat, so i cut it down to 100 instead and it tasted perfect. Thanks for the recipe! I love it :D

      Syed Sami you can tell by the texture. If there are no bubbles left on the top and the yellowy cream is visible and so thick that it becomes harder to whisk its done. Take it off the heat, whisk it a little more to check and make sure it’s fine, then put it in a bowl, cover it with the plastic and place it in the fridge to let it cool.

    Preppy Kitchen has become my go to place to learn how to bake. My sourdough bread is now legendary among friends and family thanks to your recipe. Love your relaxed demeanor and amusing asides. One thing I would appreciate is consistency across the recipes on youtube versus the website. This recipe is a great example. This video says 226 grams of butter but the website only talks in tablespoons....thanks so much

    My 3 year old son is having his practice reading and he came across the word "tart". So i wanted to show him and found you. You're video were amazing! The lights, bokeh, editing, narrating while showing step by step on how to make your perfect tart crust. Now he wants me to bake it too. haha! Wish i can. Now i'm your new fan here.

    Tried the recipe "bright eyes😉", loved it.
    Tips, if you dont have ring molds use foil with holes in it. I used silicone mold and foil. The pastry was very sweet so if you like it with a balance, just use a little less confection sugar in the dough. My daughter loved them though. Thanks, been needing a dessert recipe that isn't chocolate for my arsenal. Again, thanks and keep doing what you doing. 👌👌👌👌👌👌🥰

    Ok... so I made this for Christmas 🎄 this year. I’m not a drinker and really can’t stand the taste, so I was a bit worried about the brandy. I did exactly what he said to do, including the the brandy. The taste was out of this world. Soooooo good!!! The brandy enhanced the taste of the apricots.

    That is such a simple way of making a blind pastry shell !!! I'm going to order some of those De Buyer metal rings. No more struggling with floppy pastry in a conventional loose-bottomed flan ring and then tamping the corners down with a little ball of pastry.

      @@humss5884 you just have to keep stirring until it gets really thick like it shows , all stoves are different with different times, as long as it's thick then take off stove,
