      Marshmallows were initially made with marshmallow root. I use it to make tea for my stomach problems. They quit using it a long time ago, licorice root to make licorice is no longer a thing too.

    My mum would say "why are you cooking the spoon?" Lol. That's what she says to me if I leave the spoon in the pot while cooking. I'm a vegetarian so I'm definitely going to try this...theres so many sweets I can't eat from the stores because theres beef gelatine in almost all of them...yuck

      Think about it this way: Truly, just go with the thing you want to eat, where you know how the animals or plants are being treated. That's if you really want to care. Food is food, we can't get through life without eating something else that is or isn't alive. Personally, I'd rather eat a balanced diet, and just get it all over with. We should be glad we have a surplus of food; hell, we have so much food it gets wasted. So, just remember this: The 2000's are better then the 1900's. Food MADE America. Food drives us to work, and we revolve around it. Go ahead, be picky over what happened/happens with food, but in the end, it's just food.

    Absolutely a delight..since most hand blenders have a single speed..do we still have to beat the mixture for the same duration?
    Any other indication to show that the mixture is ready to be set?

      1 tablespoon of Agar granules is equal 1/2 teaspoon Agar powder.

    This recp didn't worked for me, the mixture was yellow after beating for say half an hour it was not fluffy.

      Yes you can simply replace agar agar with gelatin. And it should be beaten while it's still hot.

    I boiled it for 10 minutes instead of 15 and sugar crystals were formed..had to throw everything

    I think some of our problems may come from the fact that the agar agar (vegan gelatin made from seaweed) that some of us get is powder, others granules, others flakes, etc. It makes a HUGE difference how much to use. If 1 Tbsp agar granules equals 1/2 tsp of powdered agar, then using 2 Tbsp of powdered gets you a royal mess. I found out the hard way that when folks are talking about "adding agar agar" they really PLEASE need to specify WHICH TYPE is being used so dolts--er, inexperienced marshmallow makers-- like me don't end up with a frisbee of gelatinized goo. It still tastes pretty good, but I cannot melt it on sweet potatoes for Thanksgiving, float it happily in vegan hot chocolate, or squish it squishily between gluten free graham crackers. :( I will not give up. I will try again with only 1 tsp of agar powder and cross my fingers. ;) Thanks and congrats to all of you who figured it out and had lovely, fluffy marshmallows to nom. Cheers!

    I just can't get this recipe to work :( when I let the sugar/water mixture boil it becomes super thick and then when I stir it it turns to grainy sugar again. I then tried to mix the water and sugar better and stir contantly and not boil it too much but it's still too thick. I added more and more water while whipping the mixture but it never gets fluffy, only thick and sugary...and it stays brown after adding the vanilla

      Suheila Mohamed the mixer is intended to make the mixture fluffy and airy so I’m not sure if a blender would have the same effect. Haven’t tried it myself though

      Im late but what i have seen in many videos is beating it for at least 8-10 minutes or until the peaks almost can stand up, when pulling the mixer out.

      Mixture should be hot when beaten up. It should still be slightly warm when you are done beating so that it is malleable enough to put into a pan (you should still be able to feel slight heat when putting your hands on the mixing bowl). Once it cools it will harden into the marshmallow so you want to do everything before than.

      Agar Agar is a vegetable alternative to gelatin and works just as good as gelatin. It is made with seaweed.

      Hi Manny, probably the Color of vanilla Essence. Next time try adding few drops of white vanilla Essence or white gel color of using same vanilla Essence

      Manjula V if it cools for too long it’d probably set and become hard kind of like candy so it’s best to mix soon. The fluffy white marshmallow mixture also sets really fast

      Agar agar is a dry power or flake like ingredient mad from kanten algae, it easier to order it online. I have no idea how they make it possibly by boiling the algae and drying the agar agar but I think it would be easier to just buy agar agar from Amazon or something.

      Agar agar isn't gelatin. It's a gelling ingredient extracted from algae.
      Regular gelatin is made from animal collagen.

      It's like gelatin but it's vegan. It's just its name. Comes from agar plant or something. We use it a lot over here in malaysia to make puddings and our desserts. We even have a specific pudding called agar-agar and agar is the main ingredient. Lol
