  • Learn how to make aspic recipe. Aspics' original use was to prolong the shelf life of food. Since aspic was used to glaze the entire item, it cut off the oxygen supply to the food, preventing bacteria from multiplying. Today, aspics are often used to coat showpieces in food competitions, causing the food to glisten and thus making it more appealing to the eye.

    I appreciate the precision of this recipe, especially the initial set-up (the gelatin consommé at precisely 1 1/2 milimeters/1/16” setting for two minutes in the freezer), the attention to ambient temperature while slicing the tomatoes (you really don’ want your gelatin to melt, melting changes everything), every detail absolutely necessary to make things right for the long-haul flight, a full six hours in the refrigerator.
    I am still in my beginning state, having trouble with aspic ratios. This was so clarifying! Thank you, chef.

    you are a great chef...i have tried to learn to like aspic ..but cant handle the texture so this recipe is not for me ...but with all respect you are great !
