- This week, we will be making a salad of sorts: Chicken Buffet in Aspic!
This dish was originally printed in 1962 in American Home magazine and was a perfect dish to impress guests for an evening dinner.
It requires quite a bit of patience, planning and finesse, but is certainly something to admire, when it’s complete.
So sit back, grab a pen and paper and take some notes for this fun recipe that is great for the whole family to help!

INGREDIENTS:
2 chicken breasts
2 tsp salt
6 peppercorns
2 bay leaves
1 onion, diced
2 pkg (10oz) frozen peas, thawed
3 egg whites
6 envelopes of unflavored gelatin
1 can pimiento peppers
1 can sliced olives

Loved the imagery of the husband "mansplaining" and micromanaging how to cut an onion. Wow I remember my dad doing that to my mom in the 1970's. Different times.
It is missing a miracle whip garnish.
I really want to know what the point of the egg whites was.
The egg whites act as a net catching impurities creating a “consommé”. This is a classic French technique that allows the aspic to set without being cloudy from the fats and funk of the stock. Great question.
And you thought aspic was something made up for Don’t Hug Me I’m Scared.
