I supplied the instructions with this recipe for making several different versions of muffins. That makes this mix versatile. I do not recommend making blueberry muffin mix this way, because even adding freeze dried blueberries is going to be problematic because they are going to absorb moisture from the contents and become soft and unpleasant. Making the muffins using this mix as a base is your best bet.
I just made this with my kids. We added 1 1/2 cups of frozen wild blueberries (we let them thaw a little bit since they love the blue streaks). They were yummy, and I liked the texture the oats added. Do you think it would still work if I add less sugar? Maybe 2 cups instead of 4?
I just found this in my feed yesterday. This morning I made this batch. I even made some but I just spread it on my bake sheet and cut it into squares. But the only down size to it was it really didn’t give off any loud sweet aroma feeling up my kitchen. And it was way overly sweet. My family said either they didn’t like the oaks in it. Or it tasted so sweet all you can taste was sugar which made me sad. That was not what I was aiming for. Since you said it can make 6 batches I’m left with 5. How can I get it to taste less sugary. I really don’t want to toss it out.Now I’m the only one going to have to TRY to EAT these cooked muffin squares. And she said these tasted more like the Jiffy cornbread not muffins.
Perhaps you did not mix it up well enough as to distribute the ingredients. I do not find that these taste like Jiffy mix at all. This is for a base recipe and you should be adding other things to it. I included several options for different muffins that you can make with this mix in the recipe. The only way to cut the sweetness would be to add more of the other ingredients but that is going to give you more mix to get rid of. Sorry you didn't enjoy it. Live and learn. It's one of those things we all do from time to time.
I looked at your printed recipe and made the batter as follows, but I think there might be a typo. After making the mix it was as runny as soup. It says 2 cups of milk, but I think after looking at one of your muffin videos it's one cup. I added more mix, eggs, and oil and am hoping for the best here!
This is perfect! Exactly what I was looking for. I need to make low fat muffins for my husband so can’t use butter or oil. Could I use water instead? I realise they wouldn’t be as moist but would it still work? I’m thinking applesauce or mashed banana would work well for additional moisture & flavour.

I would add only 1/4 cup of brown or white sugar. Muffins are typically not sweet like cupcakes and you can boost the sweetness with what you add into it. Hope that helps!

You reminded me of the movie Forest Gump naming all the muffin options 😁! So to add fruit it would in a 1 cup ratio and I'm assuming it should be added to the wet ingredients before mixing?

I was thinking the same thing to. But I’m going to go ahead and make it like it was shown and then I’ll just keep it in my freezer or fridge for freshness.
I don't know. Most people don't have access to milk, egg and shortening powder so I don't develop recipes like that because those things cannot be purchased in the grocery store. You could do the math and figure out how much of those things to add in place of the liquid ingredients. I don't think it would be that hard.
Love your recipes. I and a lot of your viewers do have these items, so, would like these options if you can sometime in the future. Right now, I have a lot of flour in a big bucket to use up, so, your muffin and pancake bulk recipes will help in that endeavor. So sorry for your town, and, hope you and get your power up soon. A good part of being a "prepper" is the ability to be able to convert a recipe using food storage. So they may choose to take this as a learning experience. I prefer not to make videos using those products anymore because of the stigma attached. I hope you understand. Thanks for the comment.

"These People" are fine. This video was uploaded in advance of the storm's arrival and therefore it appears as if we did not even have any problems. I can assure you that we are fine, however our community is not. We were without power for four days and still there are people who are now going on 8 without. Lots of damage, flooding and other catastrophic problems here. We are blessed that our home was not damaged, however we are doing relief work at this time. I knew we would be out of power so I made sure this week's video were done, scheduled and uploaded so my schedule would not be interrupted. Thank you for your concern. Will it matter if you use bread flour?
Yes. You should not use bread flour here. It is much too high in gluten and will result in tough rubbery muffins.

You could always do the math and reduce the ingredients. It is pretty simple. I don't have a smaller recipe for big batch muffin mix. So sorry.
