👍🏻 Bean sprouts, garlic, green onion & chili can't ask for anything better especially if you're not trying to eat a lot of starch or taking a break from noodles.

I've come across a similar recipe, some 20yrs ago. And right throughout the last few months, I've been searching for variations. So I'm sure gonna make this one!
But there is a story to that recipe from back then: it was made by a "hole-in-the-wall" takeaway in Hamburg, Germany. And we where all blown away by this dish. Using only mungbean sprouts. The classic way. you heat up the wok, then coat with a splash of oil. In go: the sprouts (let's say: 200g), instantly followed by 1tsp salt and sugar, 1tbsp light soy sauce and sambal oelek. Stir fry for roughly 1 minute.
So I bought this quite often, on my way back home. One day, I ordered it, and the chef said: "Sorry, I can't sell it today. I've got bean sprouts here. But for THIS recipe, they aren't fresh enough anymore."
WOW! After this, I bought there even more often. And recommended this takeaway to everyone I knew.
Sadly, only half a year later, this takeaway closed. And I couldn't find out where they went.
I wish more chefs would be honest and also proud of the quality they serve. This guy is a hero in my book!
Greetings from the far north of Germany!
