    Ancient Chinese Legend has it that on one cold wintery morning, the white dragon sacrificed it's beard to feed and save a severely dehydrated and hungry little boy lost deep in the mountain's forest. It was a common belief that any parts of the auspicious dragon was edible and it has great health restoring and healing properties. The little boy was eventually found and brought back to the village where he recounted his encounter with the white dragon. To commemorate this good deed of the white dragon, the villagers decided to use the earth's natural ingredients of malt (there weren't corn syrup then) and rice (flour) to make a delicacy in the shape and feel of the dragon's beard. It was also with the simultaneous intention to urge the other Chinese not to hunt and kill the ferocious-looking dragons anymore. It was during the Han Dynasty period when the imperial chefs used fragrant peanuts and other flavorful ingredients to be wrapped with the dragon's beard before serving the Emperor and other royalties. Hence, the imperial dessert known as the Dragon's Beard Delicacy (made of pure malt and certainly not alarmingly sweet) is born!

    The special ingrediant is called liquid nitrogen. It cools the dragons breath candy down to a frozen state that allows it to become crispy. And because liquid nitrogen is so cold, it condensates in the air making the "steam" like breath.

      Surly it isn't liquid nitrogen; I mean, it's still making vapour in his mouth, if it was liquid nitrogen, shouldn't his tongue shatter?

      @@TheArcSet When you work with liquid nitrogen in food, you don't just leave the actual liquid in the food. The nitrogen is used to flash freeze the food, and it leaves the evaporating mist when the food is taken out.

      Ah, thanks for explaining; so it a preparation method rather than an ingredient.

      yeah but it's so simple people have not really tried it. it's like with the cheese crust in pizza, pizza has been around for quite a while but not until recently did people realize you could put cheese in the crust.

    If its solid, it's dry ice. If it's liquid, it's liquid nitrogen.
    I'm not sure how healthy it is to ingest either of those

    • @alduinbb
      @alduinbb 3 роки тому

      Well liquid nitrogen is safe. Its dangerous to consume it either way. It can freeze burn your mouthing causing ulcers. But if you just ingest it rather then keep it in your mouth it won't harm you.
