    I saw a video the other day that someone said they cooked turkey frequently enough that they bought some garden shears in order to have a better grip on spatchcocking the turkey. She showed that it was way easier to cut that backbone out with the garden shears then trying to use a knife or kitchen shears. Since it's that time of year where all of the garden stuff is on clearance, I'm thinking that's a great idea to have something a little heftier to use in the kitchen. Thanks for sharing your technique!

    Yes, I wash ALL my meat. To get any dirt off, and also, I don't know how clean the hands of the meat processors are - and each piece of meat is handled by more than one person. Also, I don't know what's on the surfaces at the processing place/ factory. Often, after I wash my poultry, the pieces feel squeaky clean, rather than slightly slippery. I don't spray the meat with a stream of water, so meat water doesn't get sprayed everywhere (I'm a microbiologist): I fill a bowl (or sink) with water than add the meat, wash, then gently pour the wash water out. Once I'm done, I wash the bowl and sink.

    Thanks for the video Laura, I’ve thought about spatchcocking for years but was always intimidated. It was your cpr reference that sold me, as a cardiac nurse I know I can do cpr so this should be no problem on my turkey 😂! We will have spatchcock turkey this year!

    My husband smoked a turkey last week! Spatchcocked and found a clean brine recipe, so so excellent!!! It was smoked on a rack with a pan so we have smoked turkey fat and smoked turkey concentrate broth 🤤 so good we're doing it again tomorrow! 🤣 39 cent a pound at LIDL! $6 whole turkey!!!

    I really loved this video because it showed the step by step instructions and you made it look so easy. I've only ever cooked a turkey once, the Norman Rockwell variety, and it was pretty good, but this looks even better. I'll wait until I have the Meater probes though, I think they're pretty essential to the turkey not getting dried out. I've never seen an injector before, that was new to me, too.

    It's not necessary to wash your meat! It's cleaned before packaging. Spatchcocking is good for whole chickens as well, but a whole lot easier! 😂
    For future turkeys or chickens, you can just put them in the smoker on the cooling rack. Makes moving them around, and taking them off very easy. Looks delicious 😋

    That looks amazing but more effort than I would put into it, I don't even have the strength to do that. The past 2 turkeys I have done a wet brine though and I thought they were better than my previous turkeys so I'll probably do that again. Also, unhinged Laura is just keeping it real which we all appreciate!

    Well, I tried it, on a 21 pounder. 😂 I’m about the same build as she is. With her tips, I got the spine out but could not break the breastbone. I had to call in hubby, who grabbed a wedge tool and a mallet. It’s sitting in the fridge now, hopefully it will cook up well tomorrow.
    Update: it cooked beautifully and was the best turkey I’ve ever had!

    Turkey is delicious. Especially leg, wing, thigh. For white meat, just pour melted butter and drippings over it.

    I usually buy an extra turkey (or two) when turkeys are cheap. I roast one and the other one(s) cut up like a big chicken and freeze the parts I meal sized portions.

    I cover mine stick it in the oven with foil all night long on 200 and right before we eat I remove the foil and turn the oven to 400 and brown comes out juicy everytime

    Looks great. I love to part the turkey out because it takes less time to cook and every piece cooks differently and has different finishing temps. This method I use as well when I don’t feel like butchering the whole turkey. 👍🏼. I also only low and slow smoke it, but for a hour at 200 to 225F, then I crank up the heat to 325F to crisp up the skin.

    I loved your unhinged video. I find that you present yourself so genuine in every video you make! Years ago I watched a video with Julia Child and she said the same thing as far as the Norman Rockwell turkey look, it doesn't happen! As an aside while I studied my journalism years ago the fellows in marketing and advertising, they would use shoe polish to give the turkey that dark brown roast! Julia proceeded to cut the turkey apart just like you do a chicken and to then put them on a flat tray. Julia wrapped the breast up tightly in foil because it was bigger and thicker🎉, but as each and every piece was roasted to her standards, she would remove them while they were at the juicy stage! 🎉❤

    I quarter my bird just like a chicken. That way if breast cooks faster, I pull them and leave dark meat on for a longer cook. Great video. I also smoke mine we real oak and pecan.😊

    Laura I wash the poultry & wear gloves & disinfect the sink & counter tops before & after prepping poultry! Our fav is deep fried poultry! 😋❤️😋❤️🙏

    Nope I don't wash my meat before I cook it. Great video!! We deep fry ours turkey every year. This year though we bought an extra turkey breast and I'm gonna air fry it. So that I can eat fried turkey.

    I normally just dry brine the bird with good salt and a bit of pepper. I used to inject it with a commercial injection liquid. Don’t do that anymore. Normally I am just serving the 3 of us at this point so I just smoke a 7 lb turkey breast that I dry brine and I smoke several turkey wings. Much easier and just enough leftovers for my leftover casserole I make the next day.

    Umm that fatty piece you called a neck piece was the tail! 😂 Fun video. I have spatchcocked a chicken but not a Turkey. I watched my Dad prepare and cut enough birds that I grew up knowing the process. I no longer cook Turkey- my son is allergic and I’m not fond enough to do a Turkey just for me.

    I don’t normally wash the meat. The only time is when there are a lot of bone fragments from processing something like ribs.

    I often spatchcock my turkey I love it like that takes way less time to cook only about the same amount of time as a chicken but I love when I dry brine my turkey then it doesn't get all wet and Soggy dry brining gives it much more flavor and you don't have to wash it off everything is all seasoned up when you put it in the oven however I am curious I wonder what it would be like if I also injected it after dry brining it I don't use a extremely salty dry brine mixture if I didn't use an extremely salty injection mixture I wonder if it would just double up the yummy ...thoughts?

    There’s a vid from a gravy guy on here that does his spatchcocked but he removes wings also. I might even take off the leg quarters then I bet it would be even easier to break it flat.
    Anyway he roasts a sheet pan full of onions, garlic, celery and carrots with wings, neck & back on top. Then he makes broth from that panful, deglazing the pan too. So he has broth ready to go (for the gravy) before even starting the turkey. I think it’s brilliant.
    I would simmer any organs and use that broth also.
    I would also simmer my carcass and make broth. Most of the white meat would be made into turkey salad as it’s so lean & unless you’ve got a high msg brine in it, tasteless. Or given to kids out of the house lol
    I’m all about poultry for broth & organs but that’s it (besides chicken wings!)
    I hope to find decent turkey cheap in my next shopping trips till Jan anyway…

      @Edu_Kate FYI, I follow Dr Fung, who is all about fasting. They do not recommend fasting bf your blood labs. Eat 2-3× a day for 3 days and only fast the minimal hours it calls for. You can get skewed results.
