    Linda, like you, gave have had zucchini coming out my ears. I have made bread, pineapple zucchini bread, chocolate chip zucchini bread, Zucchini lasagna and cooked anyway I could. I found a recipe for fried zucchini that you could freeze after breading. My favorite is slice the zucchini lengthwise and marinate in italian drag and the grill them.     Thank you for this recipe! I"m always looking for more zucchini recipes for sure, and your loaves looked lovely! I make a lot of zucchini bread and chocolate zucchini cake :) I usually blend my zucchini in the blender for both recipes, and it gives the bread a finer crumb. My sister taught me that!

    I also store my flour sugar and brown sugar in my Modular mates I love them there is nothing I don’t love about my modular mates my races in materials in it I practically have everything that comes in a box in my modular mates and I love them

    I love making zucchini bread But I use my (mock pineapple) made with zucchini which I can every year. (I do a crushed mock pineapple) I also love making mock apple pie using zucchini. Mock applesauce another good one. My latest recipe was zucchini bread ice cream it was healthy and good. You can also use zucchini to make mock jams.

    Looks beautiful. I just made 4 loaves the other day. Yours looks a little customer which I like! Mine called for 5 cups zucchini and was really too moist...I should have added more flour like you did. I used to make a casserole called California Quiche which had about 4 or 5 eggs, beaten, a thin sliced zucchini and thin sliced onions, grated swiss cheese, but I used mozzarella and parsley and Italian spices. It really tasted a lot like some kind of lasagna to me. Was really good. You could adjust that recipe to be Mexican or whatever flavor you want. But, my favorite was when I sliced a zucchini lengthwise and in half and put salt, pepper and a lot of butter in it and wrapped in foil and cooked over coals at the lake. Everyone loved it. I normally just quarter and slice it into a bowl, cover and microwave a couple minutes and eat with salt, pepper and good amount of butter. Heavenly.

      Make mock apple pie using zucchini, or mock applesauce. (I found lots of recipes to try). My latest was zucchini bread ice cream, found on internet that was really good.

      I used my zucchini bread recipe,tweaked it by adding pineapple and replaced about 1/3 of the zucchini with grated carrot...It is really delish...Mostly I leave the fruit out but add a good bit of chopped walnuts!

    Fabulous idea using the danish whisk! I bought mine a couple of years ago for the bread recipe you shared using it, I haven’t used it since 😳. Have you tried this with fresh pineapple? Thanks for all of your great ideas 😍

    If I leave out the zucchini and just use pineapple, how much flour should I use? Will it affect it at all if I omit the zucchini and keep everything else the same?

    I have a recipe for Mock Apple Crisp, using zucchini instead of apples. It's delicious and no one can tell there are no apples in the dish. Does anyone want that recipe? I also make a lemon cream pie using zucchini. Anyone interested?

      @@pmeek9120 Lemon Sour Cream Pie (non-dairy)
      Ingredients
      2 cups raw zucchini, peeled and diced (seeds and mushy center section removed)*
      1 1/3 cups Tropicana Orange Juice (not from concentrate), divided
      1 tablespoon fresh lemon juice
      1 teaspoon lemon zest
      1/3 cup honey or Agave
      ½ teaspoon salt
      1/3 cup corn starch
      1/2 cup Tofutti non-dairy sour cream
      1 baked pie crust or graham cracker crust
      Directions
      Mix cornstarch with 2/3 cup orange juice and set aside.
      In a blender put remaining orange juice and the zucchini. Blend until smooth.
      Add lemon juice, lemon zest, honey and salt while still blending.
      Pour into a saucepan and heat to boiling.
      Add cornstarch mixture and stir continually until mixture thickens.
      Remove from heat, and set aside for 30 minutes to cool slightly.
      Fold in Tofutti sour cream.
      Pour into pie crust and cool in the refrigerator overnight or for at least 4 hours.
      Spread a layer of non-dairy whipped topping on top and drizzle with a small amount of honey for color.
      Hint: Huge zucchini work best because they have lots more usable flesh.

      Crumble Crust:
      1 cup all purpose flour
      1 cup old fashioned oats
      1 cup packed brown sugar
      1/4 tsp salt
      1 teaspoon cinnamon
      1/2 cup (1 stick) butter, melted
      Filling:
      7 to 8 cups raw zucchini, peeled and cut into bite-sized pieces (seeds and mushy center section removed)*
      1/2 cup fresh lemon juice
      1 cup sugar
      1 Tablespoon flour
      1 teaspoon cinnamon
      1/2 teaspoon nutmeg
      1/2 teaspoon allspice
      Directions
      Preheat oven to 350 degrees. Grease a 3-qt rectangular baking dish with butter or cooking spray and set aside.
      In a bowl, mix crumble crust ingredients together until crumbly. Using half the crumble crust, line the bottom of the baking dish. Set the other half aside to use as topping.
      Place zucchini pieces into a bowl and pour lemon juice on top. Stir to coat all pieces with juice.
      Mix sugar, flour and spices together in a separate bowl.
      Combine sugar mixture with zucchini and pour into the baking dish that has been lined with crumble crust.
      Top zucchini mixture with the remaining crumble crust and bake for 1 hour, until zucchini is tender. Allow to cool slightly before serving. Serve warm with vanilla ice cream on top. Enjoy!
      *huge zucchini works the best because there is more flesh

    Talks to much about other things besides the recipe, not every organized, used liquid measure when measuring dry ingredients, need to use dry measure cups due to differences in accurate amounts
