    The portion wrap is a great idea. You could even make a "surprise" serving that way.

    Picking a classic 3 this afternoon to join the bj3 ,jr,kettle in the outdoor kitchen perhaps these ribs will be the inaugural cook.They look pretty tasty

      That is my absolute favorite way to garnish a dish, deconstruct the ingredients of the recipe and highlight them in their own unique way

    Thanks Chef! I’m always looking for a fun new way to do ribs, cause I definitely get stuck in a rib rut sometimes.
    I’d love to see a method video from you on cooking a pile of ribs all at once. I see the pics/videos of you at block parties and events with the KJ mounded with a stack of ribs or different cuts of meat. I think some tips from Chef E on those big cooks would be awesome.
    As always, you’ve inspired me to go fire up the big joe!

    Wow. Ribs in under two hours. That’s fantastic. Usually takes me 4-5 at 250. Can’t wait to try the hotter method. Love the chilli verde finish. Cheers chef!

    Looks great, how are you going to do ribs next? Maybe an Indian or Asian style? Though this is one I will have to try.
    Also I like the use of Lane's, they make some great rubs and spice blends. I tried them because many of your videos use them, and found the ancho espresso rub, just amazing, I use it on all things poultry, pork and even steaks.
