    Chipotle Shrimp Tacos
    Ingredients:
    1 Each Yellow Onion, Sliced Thin
    ¼ Each Red Cabbage, Thin Sliced
    1 Tablespoon Oil
    ½ Pound Shrimp, Peeled & Deveined (21/25 or smaller)
    ½ - 7oz Can Chipotle in Adobo, Diced
    2 Each Lime for Juicing
    2 teaspoons Lanes BBQ Chili Lime Seasoning
    6-8 Tortillas, Heated
    2 Tablespoons Cotija Cheese or Queso Fresco
    ¼ Bunch Cilantro
    ½ Each Avocado
    Method:
    1. Stabilize your grill at 500F, place a large cast iron or grill safe pan on the grill and allow it to come to temperature.
    2. Place the oil in the pan, add the sliced onion and cabbage and sauté for 1 to 2 minutes. Close the dome so the natural lump charcoal flavor can season the cabbage mixture.
    3. Season the shrimp with the chipotle in adobo and add the shrimp to the pan, use a pair of tongs to mix everything evenly then top with seasoning and close the dome for 4 to 5 minutes.
    4. Open the dome, mix again, ensure the shrimp are fully cooked then top each tortilla with an appropriate amount to the cooked shrimp and cabbage mixture. Then top with your favorite toppings… Cheese, cilantro, avocado, fresh squeezed lime, and maybe another dash of the chili lime seasoning. Enjoy!

    Taco about delicious. Great looking dish, I will have to try it. My wife just picked up shrimp from the grocery store today. May have to send her back for a cabbage and a can of chipotle. The one thing I really like about your recipes is that they all seem fairly within reach. e.g. nothing too fancy but tastes really good.
