We have found that we use both burners together, much more often then just 1. We considered a single burner as well. Very glad we didn't. 2 burner is perfect for us.
It's about 35lbs. It will fit in larger passthrough storages fine. If you have a smaller RV with smaller passthrough it may not. We actually store our in a carry bag for them under out dinette while traveling.
Thx. I hesitate bewteen the ex60 and the pro 30 single stove. Do you usually use two burners at once?

Is the adapter a 3/8 flare to 1/4? You said 3/8 but the quick connect you linked to shows to be a 1/4.
