Spoilers: The problem with this explanation is that Grisha helps the Alliance defeat Eren. Grisha knew what Eren's plan was and that he wanted to wipe out the whole world, but he gave him his titans anyway. I honestly think Isayama planned another scene where Eren would show Grisha something to make him go along with his plan (maybe something like he would be stopped in the end) but decided to cut it for whatever reason. As it is, Grisha's flip flopping doesn't make much sense.
I mean we all know that the writer started to come up with shit in the end of the show. I agree it doesn't make sense tbh why would you go against your son when he was doing what you wanted him to do

The only thing he could do was to rely on Zeke to stop Eren further down the line.
You know I always find it pretty ironic that the stories we heard about Ymir, both of them, are both correct. Ymir was a terror to the Marlian people and she also helped others a lot. Both were true. The memories thing is best explained like this: Grisha in that moment saw Eren’s memories. In those memories Eren was telling Grisha to do it for everybody. So it’s not that he saw Eren directly but saw the memories Eren presented him at that moment. Eren was making those memories right then with Zeke.

3:35 Grisha wasn't going to give Eren the Founding Titan, but once he found out his wife Carla was eaten he only had rage and vengeance. 3:09 He talks about Carla being safe and in season 3 there's a scene that shows how he completely changes after finding out then passes his titans on to Eren.
