    Anyone from Louisiana knows that Gumbo is a labor of love, and you just can't rush it. So all of y'all out there who want to try this, make sure you have the time. Love all of your videos Charlie. You put the time, and love into everything you cook. I hope you make people want to cook from scratch again, as most people are living in the fast lane these days, and don't have time to cook from scratch anymore.

    Imma tell y’all right now. This is the best video on the internet on how to make gumbo. Charlie is so detailed and patient. I made this recipe and it is finger licking good. Keep the goodness coming Charlie!

      There are literally hundreds of "gumbo" recipes on UA-cam but no one even comes close to Charlies gumbo. This one or his seafood gumbo. He's so ridiculously ahead of anyone else it's just funny.

    Best chicken and sausage gumbo on the internet. Your seafood gumbo is also the best by far. I'll bet my house on it. Not one Nola native that would argue that your gumbo recipes aren't the absolute best on any UA-cam channel or cooking website out there. It's indisputable. You're the king Charlie.     Fellow New Orleanian here! My mom showed me how to make regular gumbo but we never did only chicken and sausage before she passed! I used your recipe today and they kept going back for more! Thank You!

    My dad was from New Orleans and cooked gumbo during the cold months. I never saw him cook it, but the only difference I can see is, he used fresh cut okra. It was never slimy. He made a pot with hot sausage and another with mild sausage for those who couldn't handle the hot lol. His gumbo was made with seafood. Takes me back to my childhood. Frog legs wow. I grew up in San Francisco, but it was a treat to eat some of the dishes from his childhood. Oyster dressing, pralines and sugar cane. Not to forget chicory coffee. A lot of people don't like okra in their gumbo because of the slime, but doing it your way they won't even know it's in there.

    Charlie, I love that you show us how to create fabulous dishes in a humble kitchen. So many channels are set in a $15,000 kitchen with $1,500 in pots and pans. You prove that you can make great healthy food as long as you have a knife, spatula, and a pot. Much love!

    Omg! I am so impressed with your cooking. I visited New Orleans one time. I had gumbo at the restaurant where I stayed. All nite those flavors danced on my tongue. In the morning I raced downstairs to the dining room and asked for a bowl of gumbo. When I was told it’s not served for breakfast I was outdone. I was so disappointed that I was taken to the kitchen where a little old lady was making it and promised to have me some for dinner that nite. One thing she told me is when it’s almost gone you add the leftovers to the next batch. I see that same dedication in you. I love watching your cooking and I love New Orleans.

    This gumbo tastes as good as it looks. I made it yesterday, and already had a bowl this morning. It is absolutely delicious. The end product makes all of the many steps worth while. Great job Charlie, Happy Thanksgiving!

    Charlie this is the best Gumbo I’ve EVER had! Dude, I love your cooking. The whole time I was trying to finish it my family was yelling at me to hurry up because it smelt SOOOO GOOD!     My favorite thing about watching ur cooking videos is how you are so conservative with fats oil’s, etc. you don’t have to make food greasy and oily for it to taste delicious I love that. My mom taught me to cook the same way.

I was able to prepare the roux without burning it! I couldn't believe that I got it on the first try...LOL! I love your vids.     Wow you really put a lot of time into your videos. I can't wait to try this. My family only spent a short time in Louisiana but I crave Cajun food more than any other. Also, if it means anything, I'm currently going through chemotherapy and your videos are helping me get my appetite back :)

    Charlie, I am loving your videos. I lived in New Orleans for several years after graduating from college there. I have made gumbo several times, and I cannot believe I did not fry my sausage and 0kra before putting it in the gumbo. Now I know why it was always so oily. Thanks for sharing your recipe.

    My mama loved D&D sausage, I'm not gon lie Charlie, I haven't had a homemade roux gumbo since she passed, I've been using Zatarans, but I miss the from scratch and for Christmas I will try this gumbo and see if anyone notices a difference. My uncle's wife, she's from Vacherie, one Christmas put hotdogs in a gumbo, boy we dragged for her to no end!

    I love the way you say ( CHARLIE) it sounds really cute. I had an Uncle Charlie, he was a very hard working honest man, a very handsome man. He worked as a mail man plus planted a huge garden every year any veggie you can make and grow in the Michigan temperture. He was a very good man may be rest in peace.     so I actually made this following the recipe with a few exclusions, ie okra and the pork sausage for religious reasons but it turned out PERFECT with several types of hot chicken and chicken sausage. I found out it is in the spices you use, the trinity, the roux and the amount of time you let it all mingle as well as the spiced and browned meats. thank you much!

    The first time I made gumbo I made it so hot that we were all sweating after the first bite. It was from scratch but I added shrimp and it was close to yours. The second go around I made it for our ambulance crews ( Children's Hospital Oakland, CA ) and the dispatcher knew the Greatful Dead band members and she invited them. They were impressed with it and we were able to listen to some great music that night. Rock on Charlie!

      Charlie Andrews Charlie do you taste how different the Patton sausage is? I stopped buying it I even called Patton themselves and asked why did y’all change the recipe (no one called back) I grew up eating this brand, I’m so dissatisfied.

    Charlie, I didn't do every last thing, but I followed most everything. I haven't cooked in so long , for medical ( head lol) and I absolutely thank you . I am 77 years old and I surprised my family, it was a little salty , but on rice it was great. My hubby made the rice . Thank you for this memory with all our large family. My hubby does the cooking, but since he turned 80, he needs my help. We did drive by , they drove up picked their containers up and went home to eat! It didn't make their daddy/ papa as nervous. Hugs

    I've seen a lot of gumbo making recipes on you tube but after seeing this one it's the only recipe I've seen that has the gumbo color just like I've always wanted to do myself.     I made this today and it was cooking all day. I had never eaten or made gumbo before. When Charlie says to get all the grease out of your sausage and okra, make sure you do it or the gumbo has too much grease and you'll have to skim it off. I did not use the chicken gizzards, and I had to substitute other brands of smoked and hot sausage. Other than that, I followed his directions. It was pretty good. Now, if you have never made this before, you should know that the roux smells weird, the okra smells weird; this will be a very new and unusual flavor for those who are new to gumbo!
    Basically, this is tasty and is nothing like anything else I have ever eaten!! Thanks Charlie! Beautiful production and delicious recipe.

    My aunt was from New Orleans and a great cook. I have her recipe for gumbo. I’m from W Texas and first time I ate it I thought it was real good. I haven’t cooked it in a long time but I know she was a wonderful cook.
