Seitan Pepperoni:
Ingredients
* 1/2 block super firm high protein tofu about 210 grams
* 1 tablespoon Better than Bouillon Not-Beef
* 2 tablespoons olive oil
* 1 teaspoon liquid smoke
* 1 tablespoon tomato paste
* 1 tablespoon cornstarch
* 2 large cloves garlic
* 1 teaspoon smoked paprika
* 2 teaspoons onion powder
* 1 teaspoon ground mustard
* 1 teaspoon fennel seed
* 1 teaspoon Italian seasoning
* 1 teaspoon ground coriander
* 1 tablespoon brown sugar
* 1/4 cup nutritional yeast
* 1/2 tsp black pepper
* 1 teaspoon red pepper flakes
* 1 cup vital wheat gluten plus extra as needed
Instructions
* Preheat oven to 350°F.
* Add all the ingredients except for the fennel seed and vital wheat gluten into the bowl of a food processor. Process until well-combined and smooth, scraping down the bowl with a spatula as needed to ensure everything is evenly blended.
* Add in fennel seed and vital wheat gluten. Process until all the gluten is absorbed (i.e. there are no dry patches in the mix). If the dough seems very wet or sticky, add an additional 2 tablespoons vital wheat gluten.
* Run the food processor for 3-4 minutes to knead the dough for you and rapidly develop the strength of the gluten. The dough will initially break into lots of different crumbles, but don't worry; over time they will come back together and form one large ball. This is how you'll know it's sufficiently kneaded.
* Split dough into two equal halves and shape into logs. Vary the thickness depending on how big you want your slices of pepperoni to be. Then wrap each log in a layer of parchment and a layer of aluminum foil, twisting the ends tightly like a Tootsie roll to seal.
* Place wrapped seitan logs in a baking dish, seam-side up. Pour in enough water to cover the logs halfway, then bake for 50 minutes minutes. At 25 minutes, flip the logs over using tongs and bake for another 25 minutes.
* Remove from the baking dish and allow them to cool entirely in the wrappers. The pepperoni will firm up considerably after 4+ hours in the fridge, so it's best to make it in advance so that it's easy to slice.

I feel like the show prioritizes/glorifies American culture (like how the girls get fast food, pop tarts, etc all the time, and that’s seen as funny/quirky) wheareas it puts down Asian culture (like saying tofu is gross and how Lane doesn’t want to follow Korean culture)

When I watched this with my daughters I made it very clear to them that it is completely false to potray a skinny Mother and daughter stuffing themselves with horrid Junk food every day. They have given the message to young people that there are no consequences to what you choose to put in your mouth. Not to mention what they are doing to the environment. "What you put on your plate determines your fate." That would mean "Rest in Peace Loralei and Rory"
Whenever you're adding melted chocolate to something whipped, it's best to add some of the whipped stuff to the chocolate to lighten it first. That makes the chocolate mix in easier. I don't know if it will prevent the mousse from being grainy. I've never tried to make it myself.

when i make vegan egg salad i use mushed chickpeas as well! i find that they replicate the texture and taste of boiled egg yolk really well
the pizza looks amazing! I think I have all the stuff to make the tofu egg salad so I might make it today. Great vid as always
I have a few tips for the mousse. Usually you warm up the egg whites & sugar over a double boiler just until the sugar dissolves. Then you whip it. So maybe warm up the aquafaba the same way. Also the chocolate you use is key as well. You used “bakers” chocolate. That one in particular still has additives that help it set (almost like a chocolate chip) Trader joes sells a big bar of chocolate that I would say is better. Try going for a 55% or higher cacao. And do fold in a little chocolate to the aquafaba before you add all of the chocolate. Just to help with the mixing and so its not too dense. I hope this helps 🙂
another ingredient that gives a cheezy flavor is nutritional yeast and miso together, really it works, my family loves it when I make mac and cheese this way and also a touch of nutmeg.

Highly recommend the "Classic Sandwich Bread" recipe by King Arthur Flour! I've made it many times and it is the perfect white bread that comes together easily in the stand mixer. Also pretty excited to hear y'all's new song 😍

I love tofu egg salad, but have never cared for egg salad itself. Mine is based off Toby’s tofu pate. I use turmeric for color and nooch, celery salt, lovage, cumin, white pepper, and chili powder
I add dill pickle relish & yellow mustard!
My mom always packed me egg salad sandwiches too, and yes absolutely on soft, squishy white bread!!

6:40 I always feel like this black salt egg flavour and smell are a bit on the rotten egg side and can never find a good balance when using it. I only choose it for a veg-mayo salad (classic where I live) since there other flavours balance it nicely.

I actually do the tofu egg salad and use gluten free buns for the sandwich :-) It's also good with a kale salad or cucumber tomato salad

12:00 Never made vegan mozzarella and yours seems great for melting! I think it must be better than the store-bought ones, right? And how about the stretchy texture? Is it still slightly starchy when it comes to the mouthfeel? This is something which doesn't mother me but I know my non-vegan fam is not very happy about it and I really wish there was a way to overcome it :D

oo have you tried chocolate mousse that's literally just melted chocolate, silken tofu, and a sweetener (optional)? it's not airy but it's insaaanely good, and i'm an omnivore who hates tofu lol

I tried the Aquafaba mousse twice and have epically failed , it just collapses and separates when I add the chocolate does the cream of tartar help it?

I always buy miyokos mozzarella for pizza but I’ll give your mozzarella a try!
Try using some "Organic Tamarind Paste" www.amazon.com/gp/product/B01NAGWV2P . It's a unique flavorful taste, and is supposed to also be something that can help remove fluoride stored internally from drinking or bathing in fluoridated water.
Side note: the Torani "sugar free syrup" (shown 1:23) is made with Splenda, which is an artificial sweetener. Can interact with gut biome in a "not-so-good" way.
I'd probably lightly toast the white bread, for the egg sandwich, I'm hungry now! 🥪
