    Ingredients:
    1 1/2 cups long grain rice
    3 cups chicken broth
    1 tsp kosher salt
    1 tsp garlic powder
    1 bay leaf
    1/2 tsp crushed red pepper flakes
    3/4 lb ground pork
    6 chicken livers, chopped
    1 onion, chopped
    1 bell pepper, chopped
    2 stalks celery, chopped
    4 cloves garlic, minced
    2 tsp kosher salt
    Bacon grease or olive oil
    Chicken broth (for deglazing the pan)
    Instructions:
    In a rice cooker or on the stove, cook 1 1/2 cups of long grain rice with 3 cups of chicken broth, 1 tsp of kosher salt, 1 tsp of garlic powder, 1 bay leaf, and 1/2 tsp of crushed red pepper flakes.
    While the rice is cooking, brown 3/4 lb of ground pork in a skillet with bacon grease or olive oil. Once cooked, remove from skillet and set aside.
    In the same skillet, add 6 chopped chicken livers and cook until done. Once cooked, remove from skillet and set aside.
    In the same skillet, add chopped onion, bell pepper, celery, and minced garlic with 2 tsp of kosher salt. Cook for 5-6 minutes, until the vegetables are softened and fragrant.
    Deglaze the skillet with chicken broth, scraping up any brown bits on the bottom of the pan.
    Add the cooked ground pork and chicken livers to the skillet with the vegetables, and stir to combine.
    Add the cooked rice to the skillet with the meat and vegetables, and stir to combine.
    Serve and enjoy!

    Dirty rice is definitely NOT a side dish, it's a lifestyle. You might have forgotten the diced jalapenos mixed in with the "holy trinity" and the chopped chicken hearts with the rest of the seared proteins, and if you want to make it extra special you can utilize that giant skillet to lightly crisp some chicken skins to put on top of your delicious looking creation, but I'll bet it tastes GREAT just the way you described it, Thanks for the recipe!!!

    Looks great. I am making it today but how much cooked rice and where’s the recipe? I couldn’t find it. But it might just be my eyes and brain and it will be right in front of me! I subscribed. You are just by watching this recipe a great cook. I learned to cook for myself while in Norway’s Special Forces Jaegerkommandoen for 12 years. Now my sister-in-law and myself are the family cooks for the past 40 plus years. I love the food you make and your cooking style. I grew up part of each year on my grandfather’s farm in Western Pennsylvania then the rest of the year between London with my mum and Oslo, Norway. I am a triple citizen. Trying your chili next.     I always boil my liver .. I’m try you way to just pan fry next time .

      I do it both ways boiling all the chicken parts you choose to use makes the rice that much yummier.
