I had these at a truck-stop in WNY on the reservation. I was blown away that the native fried bread was the same as fried roti/bake. It was served with beans and salted beef, just what I needed.

My mum was from St.Kitts and they call it Johnny Cake or fried dumpling. She made them all the time for the family when growing up. Now I make them for my family, I will also try your method Ria - thanks for sharing.
Known in South Africa as 'vet koek' (fat cake) and normally made with yeast not baking powder. The use of baking powder and butter gives you a much'shorter' texture, whereas yeast gives a much more chewy texture. Can also be placed on an open grill for an entirely different taste experience.

It was fabulous!!!👌 I made it savory, by adding finely chopped scallion and hot pepper! Took some to my elderly Chilean neighbor, and he was SO delighted! Thank you!

This is hands down... The BEST fry bake tutorial.. I have never attempted to make because 1. I hate my hands in wet flour and 2 it seemed sooo difficult, so always depended on my mom to make whenever she visited. Now that she has since passed away... sniff sniff.... I have to now do it on my own... so will bookmark and make later today... will keep you updated... AGAIN... awesome tutorial.

This has always been a Sunday favorite growing up. Now that I’m married with kids I continue the tradition except one little variation I do which I was taught by my Guyanese in laws was adding a packet of the Goya seasoning which does give it an orange color but it definitely makes it a great addition to this traditional recipe! It’s wonderful that you share these recipes with the world and the island community.

Yakiyah Israel amazing. In Belize we call Johnny cake a type of bake that we poke with a fork. We call fry bakes fry cakes lol
