My MIL also made this lime jello salad. She drained the pineapple and put the marshmallows in the juice and microwaved until the marshmallows melted…then added jello to the hot mixture then added the cream cheese. She added whipped topping and a tablespoon of miracle whip and nuts. She hand mixed all of it. I’ll see if I can find the recipe.

I grew up on this salad because it was my mother’s favorite to make in the 70’s and 80’s, and her name is Linda too..Lol I’m not crazy about canned pineapple, so I’ve never made it, but I do remember liking it, all except for the pineapple. This is definitely a vintage recipe that I have always loved! The newest use for jello that I like is Jell-O shots! And I SURE love those! Sounds like fun right! Can you imagine…..friend girls get together to cook for the holidays. Add in a few Jell-O shots!! What fun it would be! Thanks for reminding me about this recipe. It sure made me think of loved ones that are no longer living but forever in my heart! Happy Thanksgiving! Yes not Happy Holidays yet! Let’s not forget it ain’t Christmas yet y’all! Thanksgiving is important to me bc family gets together for the first time in a while. There will be plenty of time for shopping ladies….and guys!! That sunset was beautiful! 😊😊😊Amy, my Gramma made a dessert like that but hers didn't marshmallows, it had 8 oz of cool whip instead. She'd also put a big dollop of cool whip on top, sprinkle finely chopped nuts and decorate with marachino cherries. It was always a family favorite.❤❤❤

I have planned on making it this Thanksgiving just to be reminded of her. And what a Blessing she was to my life. My hand held mixer won't mix on slow either, always high, frustrating! I love that salad, my mama made one similar to that for every special meal! We love it! Thanks for doing a lot of those old favorite recipes we all remember. Yes, I have that jello mold. Tupperware
My mom's lime jello salad was pretty much the same recipe except she put grated longhorn cheese in hers with pecans. It was always wonderful. Some recipes bring back wonderful memories and this was one of those recipes.
My Mom made this. She added the cream cheese and marshmallows to the hot jello and water mixed well. Then added the rest of the liquid, pineapple and nuts to it.
Anything jello made with pineapple Mis pineapple withh juice and marshmallow the night before The acid In pineapple starts to dissolves the marshmallows and makes foe a much creamier product
my mom has been making something similar for my whole life. but she lets the jello set up completely. then adds pecans, maraschino cherries ( cut in 1/2), mini marshmallows,1 can of tidbits pineapple, 1 can of crushed pineapple ( both cans drained and juice added to the jello instead of cold water) and cool whip vs cream cheese ( less calories), and cottage cheese. this is all added to the 2 boxes of lime jello. no idea what this variation is called. anyone know? its probably from the 60s.

I think the marshmallows are put into the Gelatin when is still HOT,so they melt. Then refrigerator.

Amy, gelatin was invented in the mid 1800s, but Jell-o came along in about 1897! Can't believe it has been around that long!
