- BANBERRY TARTS #thumbprintcookies
3 sticks Softened Butter (1-1/2 cups)
1 cup white Sugar
2 Eggs Yolks
1 teaspoon Vanilla Extract
4 cups pre-sifted All Purpose Flour
1 CUP of your favorite Seedless Red Jelly or jam (I use seedless raspberry or red plum)
Cream butter and sugar together with an electric mixer. Add yolks one at a time mixing each time to incorporate. Add vanilla. Add flour 1 cup at a time mixing between. Do not overmix dough to have a tender cookie. Preheat oven to 350 F. Scoop 1 Tablespoon sized dough onto a cookie sheet. Roll into balls and push down with your thumb to make a well in the center of the cookie dough. Makes about 62 cookies!
Stir about a cup of jelly to make it smooth and place into a sandwich bag. Snip a corner tip and pipe a bit into the thumbprints. Bake 15 to 17 minutes. Let cool a couple of minutes and transfer to a wire rack to cool completely. Pack in air tight containers. I truly don't know how long these will last because we eat them up in just a couple of days. They are that good!

Thank you for all your hard work putting these videos together and sharing your recipes with the world. Not sure if you have thought of this, but what a legacy you will be leaving behind for your children, grand children and all those that follow. Many times I have wished that I had a recipe of my mother’s and/or grandmother. I’m fortunate to have a lot of them because she had most of them written down and when she passed on to the her next life in Heaven that was one of the things that I requested from her belongings. Hope you have a Merry and a Blessed Christmas.

Ina Garten has a similar recipe. The dough balls are rolled in coconut and orange marmalade or raspberry jam placed in the indentation. They are yummy too. 😊

The cookies look delicious and you could use any kind of jam or even chocolate chips, Carmel or Reese peanut butter cup.
I like different jams from blueberry, Raspberry, strawberry, strawberry-rhubarb and mixed berry jam.

And I wud love to have 1 of those Kitchen Aid Stand Mixers. I have a Stand Mixer. And I make almost all of my grandbabies and my daughters birthday cakes every year. And at Christmas. Nana's (ME") thing is all kinds of cookies. Maybe like butterscotch white chocolate macadamia nut carmel pecan Hershey kiss peanut butter chocolate chip etc. ALOT. And I'm gonna try the white chocolate macadamia nut cranberry cookies this year. Bc Subway makes the white chocolate macadamia nut Raspberry cookies and they r so very good. And I also make big batches of homemade Yeast rolls and a bigger Stand mixer wud be so helpful and amazing. Bc the one I do have is a 3 quart and it works. But I have to separate the batches and it takes forever to do. But as soon as I can afford a Kitchen Aid on HSN that I can make small payments on one. Maybe I can get one.
