15.25-ounce box Carrot Cake Mix
1/2 cup Vegetable Oil
4 Eggs
1/2 cup Buttermilk
1/2 cup Sweetened Coconut Flakes
8-ounce can Crushed Pineapple with the Juice
14-ounce can Sweetened Condensed Milk
3.4-ounce box Instant Vanilla Pudding Mix
2 cups Milk
14-ounce container Whipped Cream Cheese Icing
8-ounce container Cool Whip, whipped topping
Jar of Caramel Ice Cream Topping
Chopped Pecans
Mix together for 2 minutes on medium speed with an electric mixer. Pour into a buttered 9 x 13-inch baking dish and bake at 345 degrees F for 25 minutes until done. Let cool 10 minutes and with the handle of a wooden spoon, poke holes into the cake not all the way thru. Pour the sweetened condensed milk onto the cake and spread evenly with a spatula. Let cool completely. Whisk together the pudding mix with the milk and let sit a few minutes until thickened. Pour onto the cake and spread evenly with a spatula. Using an electric mixer mix together the whipped cream cheese icing and the coop whip. Frost the cake smoothly. Top with Pecans and Caramel Sauce and Enjoy.

Hey Amy! I don't see that anyone provided the Baby Food Carrot Cake recipe you were looking for...I found one!
The recipe calls for carrot baby food, or a combination of carrot, apricot, and apple baby food. You can also use pears, too. Feel free to play with the balance of ingredients if you want to use the natural sweetness of fruit purees.
Note: This cake recipe is NOT meant for babies. Baby food is simply an ingredient.
Ingredients
3 large eggs
1 1/2 cups sugar
1 cup vegetable oil
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
2 junior-size jars baby food carrots, or 1 small jar each of carrots, applesauce, and apricots
For the Frosting:
2 tablespoons margarine, or unsalted butter, softened
3 ounces cream cheese, softened
2 cups confectioners' sugar
2 teaspoons milk, or more as needed
Steps to Make It
Heat the oven to 350 F. Grease and flour a 13 x 9 x 2-inch baking pan.
In a medium bowl, mix eggs, sugar, and oil together until well blended.
Add the dry ingredients and vanilla extract and beat until just blended.
Fold in the baby food.
Pour the mixture into the prepared baking pan.
Bake for 40 to 45 minutes until a cake tester comes out with a few moist crumbs.
Frosting
In a bowl of a stand mixer or using a hand mixer, cream together the margarine (or butter) and cream cheese at medium speed.
On low speed, add the confectioners' sugar and the milk.
Mix until smooth and creamy. Add more milk as needed to create a spreadable frosting.
Variations
Carrot cake is also delicious with some of the following optional ingredients:
1/2 cup chopped toasted walnuts or pecans folded into the batter, or 1 cup walnut or pecan halves used for garnish on top of the cake
1/2 cup to 3/4 cup unsweetened shredded coconut sprinkled on top of the frosted cake
1/2 cup raisins folded into the batter
1 small can of crushed pineapple in its juices
Additional spices such as ginger, cloves, allspice and/or nutmeg
How to Store and Freeze Baby Food Carrot Cake
This cake will keep, covered, at room temperature for 3 to 5 days. You can refrigerate it if desired, but it may dry out a little bit.
Carrot cake will freeze well if wrapped (try it in individual slices) in foil and placed in a zip-close freezer bag. Defrost at room temperature or in the refrigerator. Cake will keep for up to 6 months, but the sooner you consume it, the better.

New subscriber! My sister turned me on to y'all. We're up here in southern West "By God" Virginia. We're in our 60s, disabled, but still love to cook when we can. She made one of your recipes yesterday with the red beans, smoked sausage, and ground beef. My brother in law has become a finicky eater and the last count she mentioned he'd had was four servings! This is a great recipe. I love carrot cake. 🥕
I use to entertain a lot, when my husband was alive and we lived in a different place and time. I would make it all from scratch and it was fun and I enjoyed it. However, I had so many dishes when everyone left and I felt like I was so tired and couldn’t enjoy everyone. I know exactly what you’re saying! Im glad you found a good balance of doing mostly from scratch, but not all. Shortcuts are good and it’s still homemade with love. You work days ahead of the dinner and then it’s over so quickly!
When I was a little girl, I’d always want the empty van from the condensed milk and the spoon. I loved that stuff!

All pecans need checking in the creases and remove the bitter pieces out. Not all, but every time I bite into a bitter piece. It’s worth the extra 10 - 20 minutes to ensure that never happens.

My husband loves carrot cake but no way he will eat it with pineapple in it. Thought you said you were just using the juice from that can of pineapple you used all of it juice and pineapple.
