Finally!!! My mother did not leave a recipe file! She was a cook like no other!! This is her recipe I do believe. She always had her food presented beautifully! Cut this salad in squares for serving as you said. My sister and I have tried every recipe on the internet with disappointment. Can’t wait to prepare this!! Oh the memories and delicious food!!

I hope this turned out to be the recipe you were seeking! If it turned out to not be quite creamy enough, my grandmother had an earlier version of this recipe in which she used 1/2 cup of mayo, but later she started using just the 4 Tbsp (1/4 cup) and that was fine for all of us.

My aunt used to make this but she used chopped celery, cottage cheese, and a small amount of drained pineapple, no mayo. We lived in California so I think I'll call it the Western version. As I recall when it set all the add ins floated to the top, and it was yummy. I am going to try to make this tomorrow. I am 75 yrs old, so this is really a vintage recipe. Thank you so much for sharing this with us old timer post WWII boomers!

Hey, I am quickly approaching my second half century so I’m no spring chicken! 😁 I love these classic recipes. Great idea about a West Coast version and an East Coast version. Especially, a southeast coast version because I do think we will put mayonnaise in nearly anything down here! 😄

You are most welcome! I'm so glad you found what you were looking for! I will tell you that after you make it, you may decide you want to make tweaks. I've seen this with less mayonnaise or with different curd cottage cheese, or with more or less pineapple. Just make it once and figure out if it's just right, or if you want to tweak it. I hope you enjoy it!

@@OldTimeKnowledge you know, I had no idea it was called a congealed salad. That's probably why I couldn't find it. If you want to make an extra decadent version (and the way my grandma used to make it before she modified the recipe to make it a little healthier), add a half cup of mayo instead of just 4 Tbsp. It's delicious either way, but the 1/2 cup of mayo makes it extra creamy.

It was warm enough that it was outside which was rather lovely they had grills & a huge stone fire pit ... tables with a sea of food. I have to admit I saw this salad & was kind of scared to take some. When leaving they gave me a huge party tin to fill up with leftovers to take home (that's southern hospitality there) well I thought what the heck I'll take some of that green stuff... well I'll tell you it was my favorite thing I took home!!
