And as an aside, in Italy a serving of pasta is the size of a teenagers fist, not the size of an adult's head, like here in USA. And notice that she pours liquid into the pan before the garlic gets very brown. Once garlic gets browner than that it turns bitter and the dish is ruined.

I think I love these early episodes almost better than the up to date Lidia shows. Hey, they are all good, but these are a gem!!!
