I recently had a coworker of mine ask me if I knew how to make something like this and for some reason I couldn’t find what he was looking for until I stumbled across this video! I baked this for the first time and OMG !! Everyone loved it so much!! Although I couldn’t find the measurements in the description or on the website I was still able to recreate this beauty! Mine did have lots of cracks but the topping hid it away nicely. 😂 I’ve never used a water bath so I’m sure there was some error there. Hi! The trick is to whisk the butter enough. I usually whisk my butter for 7 to 8 minutes before adding anything else. Once you add the confectioner's sugar, keep whisking for a few minutes until the frosting is light and fluffy.
@@Ad-wr8bt Buttercream is thicker and heavier but holds its shape better. Whipped cream is lighter and fluffier but doesn't pipe as well. I personally like French Buttercream and whipped cream as my favorites :)
I made this, and followed the recipe exactly, and it cracked and was over baked at 2hr bake time. Not sure what I did wrong. This was the first cheesecake that whipped so much air in the batter. The custard was amazing though.
Oh, no! I'm so sorry that the cheesecake cracked! Every oven bakes a little bit differently so it could be that your oven is running hot. Try baking about 10 degrees less. Did you also do the water bath?
@@TatyanasEverydayFood thank you, for the reply, and wanted to say as well, that the cheesecake tasted great, and with the custard on top, no one noticed the cracks, but I knew… lol. I have a convection oven, and bake constantly. I did use a water bath as well. The water in the bath was completely evaporated afterwards, but that has been the norm for me, since I started using the water bath, vs just having a pan with water in on the rack below. I want to try this recipe again, so I can see what I can do, since it was so good, I am definitely making this again.

And I guess you're not worrying about cracks because over mixing the eggs like that but so much air in it that your s*** would crack like the Grand canyon
7 to 10 minutes mixing your cream cheese lady are you crazy I'm a pastry chef let your cream cheese get to room temperature blend it and a food processor for one to two minutes done seriously 7 to 10 minutes you're over working your mixer

Can I use a 10-inch springform pan instead?
Yes, a 10-inch pan will also work well. Just keep in mind the cheesecake will be slightly shorter. Bake it for about 15 to 20 minutes less.

Lol did you see any cracks on that SMOOTH cheesecake? I've been making cheesecakes for years and never have cracks or other issues.
