How To Make Trini Fried Channa (Chickpeas Snack) | Foodie Nation x Trini Food Designer - Arlene

  • Time to get frying! Kez learns how to make Fried Channa in this week’s ‘How To?’ episode:
    Ingredients
    1lb Channa/Chick Peas
    Approximately 3 cups Vegetable Oil (for deep frying)
    Salt
    Black Pepper
    ½ tbsp Hot pepper (remove seeds)
    1/2 cup Chadon beni
    1/3 cup Garlic
    3 tbsp Masala
    Method
    Remove debris from channa, place in a large bowl and cover with water.
    Let this soak overnight.
    Drain channa and dry thoroughly with towels.
    Finely chop chadon beni, garlic and hot pepper into a large bowl.
    In a deep 10inch frying pan, heat oil on med to high flame.
    Deep fry channa in small portions until they float to the top and turn brown.
    Remove from oil and unto paper towel to remove excess oil.
    While they are still hot, add to seasoning mix and toss.
    Add salt and black pepper to taste.

    Love it but just a little more color , wanted to make sure is it garam or amchar massala , cause I used the garam ,&a little tiny bit of ground geera 👍👍👍👌👌

    I make it but do mine in my air fryer. It’s good but nothing like deep frying.

    So i tried this today and the channa kept popping out the oil...why is this?

      Dry it more! It has moisture in it still. Pre-heat the oven for about 20 minutes and switch off. Place baking tray with channa in the hot oven and let dry for about an hour.

      She used salt..black pepper..fresh garlic..and minced shadow benny/culantro. She also added what she said was her secret seasoning🤫. I used just salt..garlic..shadow benny and hot pepper.

      I do a short cut....drained then toss with oil and seasonings of choice and bake in oven 45 min 375'f stirring for even color
