Regarding Hoster being a good father, you have to remember in this story we're seeing the highest levels of nobility. Historically, such people rarely raised their own children. Princes and princesses, for example were given their own castles/estates with staffs and raised almost entirely by attendants and servants. Ned Stark was the exception, not the rule. It's actually why the Starks were surprised by Theon's betrayal. Most nobles would remain loyal to their families over friends/allies, even if they didn't really like their relatives; even if they barely knew them. The Stark's value the emotional bond whereas for everyone else it's about blood and name. It's why Tywinn doesn't stand for Tyrion being imprisoned even though he hates him. He's not being fatherly. He's being the head of his house, which is what high nobles do/did.
regarding the Tully's going against the Targs in Robert's rebellion, I think that if Ned and Jon hadn't agreed to marrying Cat and Lysa, he would have supported Rhaegar, as the rebels were still hard-up at that point. Tywin didn't join in until after the Riverlands gave Robert the troops that he needed to win... Hoster is very Tywin-like in his machinations, and was sitting back waiting; he would not have joined them without some serious political mileage, and marrying his two daughters to Lord Protectors was the price
If the Freys get whiped out as everyone expects then Edmure's unborn child, who is Walder Frey's grandchild will have a direct claim to The Twins and the Frey lands.
I think a common familial trait of the Tullys is that they are "people persons." There is a repeated knack for them to draw people together under duress - Hoster orchestrating a coup during Aerys' descent, the lord who rallied a bunch of houses to Aegon I, Catlyn is an effective diplomat whenever men stop being sexist and listen to her, The Lads in the Dance of Dragons kept a lot of men going, Edmure Tully feels compelled to protect as many smallfolk as he can fit in Riverrun. The implication is that the Blackfish will have some serious power bringing a bunch of people to his cause.

I also loved the idea of Bronn getting the twins. Someone as smart as him, controlling such an important choke point and collecting all those tolls to cross could have risen in power very quickly! Too much to ask for from d and d I suppose
If The Tullys do end up in control of the Twins what they should do is use them like the Aryns have used the The Gates of the Moon and The Bloody Gate. A non hereditary holding to be entrusted to favored vassals at the Tully's pleasure. The Tullys could keep the lions share of profits from the tolls and rents due the lords of the crossing, proving the capital to make them the most powerful house in the river lands in fact as well as name.
I always wondered why Hoster Tully sided with the rebels. I am now reading the books for the first time and almost Done with the dance of dragons. But you just explained what could have been the reason. I always wondered why would he just switch up on the mad king. I get it. Areys messed up Jamie and Lysa by naming him to the kings guard, and now his other daughter’s huge betrothal, he went and killed Brandon. That makes sense why he would join the rebels. 😂 that would piss me off as well.

House Tully have always interested me! I always found myself investing in Edmure as he seemed to be different to most characters in ASOIAF (being ‘soft’ and openly caring about the common people) although I disliked how the show just made him into some kind of buffoon.
I think the secret that Catelyn is hiding is that Robb is really Brandon‘s son. The Blackfish is pissed off at his brother and family because they deceived Ned.
I read a really cool theory; after the war of the ninepenny kings Bryden came back a war hero like Barristan, Tywin and Randal. And the reason he kept turning down marriage prospects is because he was holding out for a position on the kingsguard. Despite being a hero he was always slightly in the shadow of barristan, but if he had been recognised fully and joined the kingsguard that would make him the whitefish. That or he's gay.

It always seemed to me that brynden was just biding his time for another war to prove himself or for SOMETHING wich could easily be that kingsguard position. Or hes gay 🤷
