    I'll show you how to make a 5 course dinner black truffle dinner at home that's easy but still showcases truffles. These 5 courses would be great on their own, but the truffles just take it to the next level. Truffles and caviar and two things that scream luxury, but paying for them in a restaurant is expensive. So let's cut out the middle man and make a great dinner at home with them.
    Black truffles are on of the things I look forward to every year. There really is nothing that has the same, delicate, fragrant flavor. Yes, they are pricey, but sometimes you need to splurge on yourself and what better way than with truffles!
    5 Course Black Truffle Dinner for Two People
    2oz Black Truffle
    4ea Porsciutto Slices
    .5oz Arugula Leaves
    1ea Blood Orange
    .5oz Parmesan Cheese
    Olive Oil
    Aged Balsamic

    Chef, you have gone above and beyond with this video. I've always been intimidated by black truffles--this video demystifies and inspires! Just awesome. I'll be making all of these eventually. We do this anti-Thanksgiving thanksgiving each year where we do a seven course dinner that's cliche-free. We've been searching for a salad course and that Prosciutto di Parma I think will do very nice. Thanks for this bank of recipes!
    I've seen black truffles online, but it sounds like you can handle them before buying. Specialty store?

      Specialty stores should have them. Also higher end cheese stores. There are a few good places to buy online as well. There are canned truffles, but I would stay away from them. Your Thanksgiving dinner sounds like a lot of fun!

    We just bought our first ever French black truffle from Central Market. $30 for a golf ball. Sliced it up and it tasted like a very mild button mushroom. I give it a 1/10 and a button mushroom as a 5/10. Seemed pointless. Same experience when I spent something like $30 on caviar from Whole Foods. Rate it a 1/10. Not sure I understand why people go absolutely bonkers for these 2 products.

      The truffles are at the end of their season, so not the best by any means. Try again after New Years. They should be firm and very aromatic. If they aren't then pass on them. Truffles get a lot of hype but it's not something you are missing out on. Caviar is very dependent on quality. Whole foods does not have quality caviar. Great caviar is great, firm, salty, slightly fishy (but in a good way). Petrossian and Sterling have great caviar as well as gourmet markets. Oscetra is my favorite, but there are some really good farmed caviar that you can buy that is almost as good as oscetra. A good vendor will let you try a little before you buy and don't be afraid to ask to try it!

    Great video! How much stock and cream did you use for the soup?

      I used a 1/2c chicken stock and 1/2c heavy cream. You can use more or less depending on how thick you want your soup.
