    We just bought our first ever French black truffle from Central Market. $30 for a golf ball. Sliced it up and it tasted like a very mild button mushroom. I give it a 1/10 and a button mushroom as a 5/10. Seemed pointless. Same experience when I spent something like $30 on caviar from Whole Foods. Rate it a 1/10. Not sure I understand why people go absolutely bonkers for these 2 products.

    • @achefandhisspoon
      @achefandhisspoon 11 днів тому

      The truffles are at the end of their season, so not the best by any means. Try again after New Years. They should be firm and very aromatic. If they aren't then pass on them. Truffles get a lot of hype but it's not something you are missing out on. Caviar is very dependent on quality. Whole foods does not have quality caviar. Great caviar is great, firm, salty, slightly fishy (but in a good way). Petrossian and Sterling have great caviar as well as gourmet markets. Oscetra is my favorite, but there are some really good farmed caviar that you can buy that is almost as good as oscetra. A good vendor will let you try a little before you buy and don't be afraid to ask to try it!

    Every other video made it seem like you needed like 3 hours to restore your pan. This is brilliantly simple. That being said, don't do what i did. I made the baking soda paste and put it all over the pan, and it cleaned some rust. And I thought "he made it look way easier, I still have rust." Then I realized I had forgotten the vinegar, which is required for the chemical reaction. Don't get me wrong, just the baking soda is pretty effective along with some hard scrubbing. But the vinegar is required to really get it clean. My only question is whether or not any vinegar will work. I only have apple cider vinegar. Gonna try it, but not sure.

    Hey if you don’t use soap on the pan to clean it after cooking then how and what are you supposed to use to clean it after using it to cook with in order to sanitize it for the next time you’re cooking without needing to season it again? I’ve seen my mother use cast iron but not properly. I would love to learn how to properly care for it after seasoning it, because I love cooking on cast iron 😅

    I usually do anywhere from 5-10 cast iron items at a time but i just chunk them on a fire for about 10 minutes, take it out of the fire and pour used cooking oil on them. They will smoke then catch fire. Allow the fire to burn out then wipe with clean oil. Allow them to cool and look brand new every time.

    What do you do with the little flecks of rust that just don't seem to want to come off? For the most part, this method removed 98%, but there's a couple of little patches that are furiously resisting removal.

    Is that a carbon steel or a stainless steel knife ? I've had plenty of success using whetstones to sharpen carbon steel knives but a couple of my knives that are stainless really give me problems and can only get a decent edge using a belt grinder because the steel is too tough for the stones

    • @achefandhisspoon
      @achefandhisspoon Місяць тому

      That one is carbon steel. i have a few that take awhile to sharpen on an 800 grit whetstone but once they are sharp they hold their edge. You can try using a 400 grit stone before the 800 and that should help cut the time down.

      When I cook things like eggs, bread, pancakes, etc I generally just wipe it out and put it away. Things like steaks and pan roasted chicken, if there are any crusty bits, I wash it with hot water and soap if necessary. Then completely dry it on the burner and give it a light coat of oil to prevent any rust. Just make sure there are no food bits and a light coat of oil and you should be good to go.
