    I had a dish in Tuscany like this last summer, the chef went nuts with the truffle, but I think summer truffles are much cheaper than fall ones. Incredible Kitchen Maestro Gennaro!

      significantly cheaper but summer truffles are essentially flavorless. save the bucks and spend it on white truffle in november or december. burgundy (autumn) truffles are good too, but its not nearly as pungent as white or perigord. get burgundy if you want truffle but doesnt want to break your bank.

      EZGlutenFree truffle Hunter minced truffle in oil on Amazon. You can have something similar.

    Your cooking is just amazing. I have just made tagliatelle, with minced pork, penceatta, 250g tagiatelle, cherry tomatoes, carrots, onions and olive oil. And ragu sauce with red win as Genaro says, "Oh my my"... please comment back Gennaro, my favourite chef 👌

    White winter truffles are very expensive, but black ones are much cheeper. You can get that pasta in a restaurant for like 14 euros. They also sell it whole (golf ball size) for 7 euros

    Between his cookbooks and UA-cam videos I must have made over 50 of his recipes in the last year or so. They never...and I mean never fail. Always delicious, incredibly easy and so flavorful. Now, I have to head over to Wegman's and get some black truffle. And the only thing that's going to save my ass, when my wife finds out I paid $60 dollars for a single ingredient is I know this will come out unbelievably delicious.
    Thank you, Gennaro. My grandparents were from Sicily, south of Catania, on the coast, and watching you cook brings back such wonderful memories.

    This looks delicious. It is the perfect way to enjoy the pure flavour of truffle! All you need is pasta, butter, truffles, olive oil, and garlic.

    Loved the recipe Gennaro Contaldo but honestly not everyone has that much truffle lying around the house. That looks like one expensive but super delicious dish with that much black truffle in it.

    Chef Gennaro Contaldo, your cooking is changing my life for the better. Through cooking, I have found passion again, so thank you Sir. My wife loves it. Because of this, I am your most loyal fan. I have a question, " Did you use two different types of oil or just Olive Oil. Second, I noticed that you are very careful with how you use Garlic. You mentioned that you do not like to fry it. Is this because it gets bitter?. You also mention balance in a dish. How do you maintain proper balance when you cook? I sure hope you folks can help, thanks for the lessons.

    that british-italian mixed accent confuses the shit out of me xD

    One helpful tip: NEVER mix olive (or any vegetable) oil with cocunat oil. The result will be blasting... literally blasting.

      Bence Illés I mix the two for cooking and have never experienced an issue. Could you tell me why this is?

      Pieyou Truth is, few years ago I had a little cocunat oil and I needed more, and I only had vegetable oil and when I added the 2 into my pan, It was like mixing vinegar with baking soda.

      I mix the two for cooking also. Never had a problem. Heated oil and water, however, do NOT go together. The burns scared me.

      Nali Singh Water + hot oil = instant skin damage :)
      I have no idea waht happened back then, but I was clearly using 2 oils, one was cocunat, the other was some kind of vegatable. Maybe their "boiling point" was different and that caused such reaction.
